I am really thrilled to be sharing another recipe here on the blog — as you know, we’ll be doing this every week as part of our new blogging program! You can eat your way to beauty, vitality and optimal health…and also share with those around you as well as our Beauty Detox community. I love it!!!
I’ve been cooking a lot for some beloved clients in London and it’s been an amazing way to test out new kitchen creations, find out what’s yummy, and then share with you and the rest of the community. I hope you enjoy trying new dishes as much as I do! The story of today’s recipe has to do with some ingredients I had in my fridge (that I bought because they looked pretty but had no real plan for, as I sometimes do…), and some leftover cooked quinoa that I used for something else (don’t you adore leftover cooked quinoa?!). But before we get into all that…
Before we get into the recipe, however, I want to congratulate all that participated in our Beauty Detox Blogger Recipe Assignment last week, which was for our Cucumber Salad With An Asian Twist.

Amazing job Beauty Detoxers, I love your creativity!! That goes for all that participated!! We are looking at so many of your pictures and blogs every week now, so stay tuned to see if your mixup recipe will be featured next time.
As you can probably tell, I’m so excited and enthusiastic about the Beauty Detox Blogger Program, because it really feels like we’re all coming together to share and inspire others.
It gives me so much joy to see these recipes be transformed into your own unique creation, often in ways I could have never even imagined!

As a Beauty Detox Blogger, your assignment this week is to ……. create your own summer salad that is easy to pack for a picnic (i.e. tastes great cold) and is based in quinoa. Try different veggies and spices, herbs, etc…the farmer’s market will hold great inspiration for you.
I think you’re going to have a blast remixing this recipe as your own! In fact, to help you and others in this process, we created a fun little graphic with the guidelines so that it’s easy for you to have handy.
Now here’s my version:
Have you ever looked at cauliflower- really looked at it, up close? It’s fantastic looking!
I was inspired by this beautiful cauliflower I saw at the market, as well as some mint I had in my fridge…
The mish-moshed perfection of fresh herbs and other leaves in nature! :)
I like zucchini diced and raw because it adds nice texture and is a pretty neutral taste that takes on spices.
I’m a curry freak! In London one of the best food elements is all the Indian food restaurants everywhere.
Cauliflower & Mint Quinoa Salad
1 1/2 cups cauliflower, cut into small florets
2 cups cooked quinoa
1/2 cup diced zucchini
1 1/2 Tbs. chopped fresh mint
1/2 cup diced tomato (preferably heirloom, if you can source! Sooo yummy)
1 Tbs. olive oil (optional, you can leave it out if you prefer)
1/2 Tbs. curry powder (or a bit less, if it’s too spicy for you)
Sea salt, to taste
Instructions:
Steam the cauliflower for about 8 minutes (confession: I really dislike raw cauliflower!!!). Toss it and the rest of the ingredients in a bowl. Season with the salt to taste. Voila, that’s it! Toss a quick green salad of sorts (like Dharma’s Kale Salad), and you’re ready for a picnic or the beach.
This recipe is a great way to expose people to the Beauty Detox way of eating, and it’s delicious enough that almost anyone on any diet will be able to appreciate it!
It’s also a good candidate to bring and share at a summer potluck, or perhaps the Beauty Detox blogger meet ups …reminder New Yorkers…the very first one is happening in New York City on June 21st and we have a bunch of RSVP’s already! I will be with you in spirit for sure this coming Saturday.

Everyone’s cucumber salads look great! Now, quinoa-based salads are something I eat all the time, so it will be fun to try to come up with something a little creative this week!
