With summer right around the corner, now is the time to stock up on Pistachio Power Balls! These easy-to-make bites are the perfect thing to keep on hand during the busy days of the season.
The star ingredient is, well pistachios of course! And they are for sure a wonderful beauty food. So you can feel good about having them around to nourish yourself whether you are home or on the go. Or you can stash them in your office fridge (with a sign not to eat them all! :) ).
The Power of Pistachios
My Pistachio Power Balls are an ideal mood-enhancing snack. Pistachios contain essential vitamins and antioxidants. All essential elements to keep you feeling good in your body! Besides being extremely versatile and absolutely delectable, pistachios naturally lower your blood pressure and immediately calm you down. By treating yourself to a Pistachio Power Ball- or two!- you will feel grounded and positive no matter what your busy day throws at you.
Of all the different nuts currently known to man, pistachios have the most iron. Iron oxygenates the blood, stimulating healthy blood circulation and resulting in a beautiful glow in your skin. Iron also energizes you because it is responsible for transporting oxygen, (our cells’ “gasoline”) throughout the body.
If your iron levels are low, your body is not able to operate at the optimal level. This can result in the dreaded sluggishness we’ve all felt, and try to avoid at all costs!! Who wants to feel tired when the sun is out shining and the days are getting longer?! So ditch the afternoon lattes and cookies, and keep yourself fueled and ready to go this season with my Pistachio Power Balls!
The Delicious Date
Now what makes my Pistachio Power Balls so delicious and wonderful is in a huge part due to the dates. I just love these little dried gems. Dates are an excellent alternative to regular sugars and are great in controlling addiction for sweet foods. Their high fiber content helps to keep you full longer- curbing the cravings. Unlike empty white cane sugar, they contain fiber and minerals and are a natural, unprocessed food grown in nature.
And guess what Beauties, dates are also they are a great source of plant-based calcium! Isn’t it always good to know what plant-based foods we can get a little boost of calcium from? I think so! :)
In addition, and equally important to note, dates are rich in copper. I’ve found that many people forget about this important mineral. But let me explain to you why it should be top of mind. Your body uses copper to help absorb iron, form collagen and boost red blood cells. They are all important elements to help you create a healthy nervous system and generate energy. So here is yet another reason why these snacking on one of these balls will make you feel so good!

Pistachio Power Balls
Ingredients
- 1 cup unsalted pistachios
- ½ cup unsweetened coconut
- 1 tsp. vanilla extract
- 2 cups pitted dates chopped
- 1 tsp. of water for blending, optional
Instructions
- Place pistachios, coconut, vanilla into a food processor and blend together.
- Add in chopped dates, 1 cup at a time, until smooth. Add 1 teaspoon of water to mixture if needed (mixture should be moist).
- Roll equal portions into balls, and place in fridge until ready to enjoy.

Does this recipe include almond butter? It looks like you have a tablespoon of it in the photo that is added with dates. Thanks!

Hi Melisa and thanks for checking out this recipe. You can substitute equal amounts of and of the following: dried figs, dried raisins, or even dried cranberries or craisins.
