This past weekend I was holed up working. I had to finish doing all the voice over stuff for the yoga video to write up (as I write this I still have to write the third part), and write and do a bunch of other Envision Beauty stuff.

So, when I’m hanging around home, I usually end up experimenting in the kitchen. It’s one of my favorite hobbies- and ways to procrastinate also. :)

I have about 50 different spices, 10+ different kinds of nuts, always a bunch of produce and herbs in the fridge, so the possibilities are endless.

I made this pate on Saturday. It’s great for when you’re straight up hungry, and you want a more dense lunch, easy dinner, or a snack. You can put a big scoop of it on your salad, on a piece of romaine heart, a nori sheet, or a slice of sprouted bread and top with sprouts! It is extremely filling.

Pumpkin seeds are a major skin-beautifying food. They are loaded with zinc, which activates hundreds of enzyme systems in the body and helps alleviate skin imbalances like acne and uneven skin tone. They are also high in the beauty mineral magnesium, and Omega 3 fatty acids, which produce clear, radiant skin. Almonds are high in Vitamin E.

NOTE: The magic liver cleansing combo of lemon/ginger/cayenne pepper is also present in this recipe. Speaking of cleansers, many of these ingredients are found in my water cleanse, incorporating nutrition in a liquid form.

The Beauty- Nut Pate (As in for beauty and contains nuts, but I guess it could also be interpreted as in for “beauty nuts” who are into all things beauty-related, because I hope those interested in beauty products would also be interested in eating for beauty as well  :) )

The Beauty-Nut Pate

Author:
Ingredients
  • Blend:
  • - 1 organic zucchini
  • - 2 inches of ginger root
  • - 1 clove of garlic
  • - ½ cup Liquid Braggs or Namo Shoyu (unpasteurized aka uncooked soy sauce)
  • - Juice of ½ lemon
  • - ½ tsp. of Cayenne pepper
  • - ¼ cup white onion
  • Add:
  • 1 ½ cups of ground pumpkin seeds*
  • ½ cup ground sunflower seeds*
  • 1 cup ground almonds*
Instructions
  1. If you have a Vitamix you can throw the nuts in there and use the plunger to make a chunky consistency. If you don’t, grind the nuts in a food processor first, then add to a bowl and mix with the blended liquid mixture.
  2. * For best results, soak your almonds and pumpkin seeds in water overnight to begin the sprouting process, and rinse thoroughly. The sunflower seeds only need to be soaked for about an hour. Much more on this in a separate entry.

Enjoy!! I am leaving for LA tomorrow so I’ll write more from there.
Hopefully I’ll have lots more done between now and then…

Happy Blending!

Kimberly

  • Hi Kim! Just wanted to say thanks again for an amazing evening! The food was truly delicious, and you’ve convinced me to try a few of your raw recipes out. I can still taste those truffles… mmm!

  • I’ve been reading your blog for a few weeks and although I’m not a raw foodist, (just a vegetarian) I’ve been incorporating more and more raw food into my diet – plenty of fresh fruit, more salads, more nuts, have essentially eliminated refined sugar etc. At this point, processed foods make me feel sick, dairy is iffy, and alcohol is an absolute no, as it gives me the worst acne.

Thanks a lot for all of your information! After your post on avocados, I now eat them regularly!

    • Hi AR!

That’s wonderful!!! I’m so happy to hear about your important dietary changes! And yes, avocados are amazing, especially for us vegetarians. Really helps to satisfy, as it has all those great filling fats and fiber. Very beautifying!
Well come back to visit more!
      xx Kimberly

  • Hi Kimberly!

Great recipe! I made it yesterday and it was so YUM!! I didn’t have almonds, so I substituted a little almond milk and ended up with a more liquid-y version which I’m using as a salad dressing.

I’m also not entirely raw (especially in the winter) but trying to incorporate more raw foods- thanks to your delicious recipes! I’m going to try the cinnamon treat and chocolate truffles next!

  • I watched “That Morning Show”, and it really inspired me to change my diet. I would really like to have the recipe for the macadamian nut pate

    • HI Diane!
Great! I’m so happy to hear that. For the recipe I used: 1 1/2 cups raw macadamia nuts, 1/2 cup sundried tomatoes, 1 tsp. Celtic sea salt and 2 Tbs. lemon. Blend these 4 things in a food processor. Then place in a bowl and mix 1/2 – 1/4 cup (depending on how you much you like these flavors) of both chopped parsley and chopped scallions.
Try it out and let me know how you do!
      xx Kimberly
