Boy, do I love a good soup during these winter months! My new Carrot Apple Spice Soup is one of those warm and comforting meals that always brings a smile to my face and energizes my spirit. I love that soup can be enjoyed by itself or paired with a salad for a heartier meal. Plus, it’s so easy to make a double batch and freeze half to have on hand when life gets crazy! With two young boys, I’m always happy to have a little help around mealtimes.
Unlike many other blended, creamy soups, this Carrot Apple Spice Soup does not contain dairy or any inflammatory ingredients. In fact, it’s full of amazing, healing ingredients that promote digestion, reduce bloating and boost the immune system. After eating this soup, you’ll feel pleasantly warm, satisfied and nourished! The star ingredient of this Carrot Apple Spice Soup is, of course, carrots! These bright orange root veggies possess strong cleansing properties that are extremely effective in cleansing our livers. When our livers are functioning well, toxins can be removed from the blood. Our bodies are thus aided in transporting nutrients to our whole body. This includes our skin health!
Carrots contain calcium, potassium, iron, fiber, vitamins B1, B2, B6, C, K, and biotin—amazing skin food, with beautifying properties! They also boost your immune system, improve digestion, and detoxify the body. Carrots provide loads of other vitamins, minerals and phytonutrients that work together to boost overall health.
An Apple A Day…
In this Carrot Apple Spice Soup, apples provide a subtle sweetness for an extra layer of flavor. Apples may seem like a basic, everyday fruit to you, but I personally love them just the same. They are deliciously juicy and an incredible beauty food.
It’s no wonder apples are one of the main ingredients in my Glowing Green Smoothie®! It would be a huge disservice to your body and your health to avoid this fruit!
Here’s one reason why: Apples have a special type of soluble dietary fiber called pectin that is particularly cleansing to your inner system. This is outwardly beautifying as well.
Because our small intestine doesn’t absorb fiber during digestion, it goes to the colon where it promotes the growth of good bacteria. It also turns into other helpful compounds that circulate back throughout your body. In addition, apples have been linked to lowering cholesterol levels, aiding weight loss, and providing antioxidants to the brain.
Turmeric gives this Carrot Apple Spice Soup its glowing yellow-orange color, and infuses it with loads of healing properties. Turmeric is the dried powdered rhizome of Curcuma longa, a plant in the ginger family. In numerous studies, curcumin’s anti-inflammatory effects have been shown to be comparable to the potent drugs, such as, hydrocortisone and phenylbutazone- as well as over-the-counter anti-inflammatory agents. Unlike the drugs, curcumin produces no toxicity.
Recent research suggests that curcumin may also provide a well-tolerated and effective treatment for inflammatory bowels, assist in improved liver function and lower cholesterol levels. Both of which aid in capturing and removing toxins and eliminating them from our bodies. These steps are crucial for keeping the bloat at bay!
The list of healing powers attributed to turmeric can go on for days (or volumes, as in Ayurvedic texts), but one of its main roles is in its ability to preserve youthfulness and beauty. Curcumin and other components in turmeric arrest cellular aging by capturing free radicals that cause DNA damage and is also a powerful ant-inflammatory agent.
While this may be enough to convince us of our need to consume this root, let’s not forget that by adding turmeric to our diets, we will also be contributing to making our skin glowing and beautiful!

Carrot Apple Spice Soup Recipe
- 6 large carrots, peeled and cut into rounds
- 4 apples, peeled and cut into wedges
- 2 cups of butternut squash, peeled and cut into wedge
- 2 shallots
- 1 tsp. turmeric
- 1 tsp. paprika
- 10 sage leaves, finely chopped
- 2 Tbs. coconut oil
- 4 cups of vegetable stock
- 1 cup of coconut milk
- 2 sprigs of thyme
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Preheat your oven to 400 degrees.
- Lay carrots, apple, and squash on two baking sheets. Drizzle with a tablespoon of coconut oil and transfer into the oven. Roast for 25 minutes, until everything is soft and golden.
- In a large soup pot, heat up a tablespoon of coconut oil and saute shallots for several minutes. Pour in your vegetable broth and sprinkle in turmeric, paprika, and sage. Simmer for 2 minutes then remove from heat.
- Once your carrots, apple and squash are finished roasting, transfer them into the soup pot
- Using an immersion blender, blender together your roasted items with your broth until your soup is nice and creamy,
- Stir in your cup of coconut milk and simmer ingredients together on low for 3 minutes.
- Serve up in your favorite soup bowls. Garnish with a sprig of thyme, sea salt and freshly ground black pepper to taste. Enjoy!
