Shiva’s Kale Salad with Almond-Ginger Dressing
Serves: 4 servings, or ⅔ cup of dressing
  • 1⁄2 pound curly kale
  • (one large bunch or
  • 2 smaller bunches), torn into bite-size pieces
  • 1⁄2 cup thinly sliced red onion
  • 1⁄3 cup filtered water
  • 3 tablespoons almond butter (preferably raw)
  • 11⁄2 tablespoons organic miso paste (preferably mellow white)
  • 11⁄2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey (preferably raw), coconut nectar or maple syrup or 1⁄2 teaspoon stevia
  • 2 teaspoons sesame oil
  • 1⁄2 teaspoon minced fresh ginger
  • Sea salt, to taste (optional)
  1. Toss together the kale and the onions in a large salad bowl and set aside.
  2. Combine all the dressing ingredients in a blender and process until smooth. Pour the dressing over the re- served kale salad and toss it well to coat. Next, add in your love and good energy for those about to eat your salad. Serve the salad at once.
  3. NOTE: Feel free to add to this salad any other veggies you like, such as a generous amount of sprouts, as I usually do.
