Strawberry Rhubarb Red Maca Smoothie Recipe

Serves: 1 10 ounce serving
  • 1 stalk fresh rhubarb, leaves removed, stems chopped in 1 inch chunks *SEE NOTES
  • ½ pint fresh strawberries, stems removed
  • 8 ounces coconut water
  • 1 tablespoon red maca powder (can substitute regular maca if red maca is unavailable)
  • ½ teaspoon bee pollen (optional)
  1. Add the coconut water, rhubarb, strawberries, coconut water, and red maca powder to the blender. Starting the blender on a low speed, blend until smooth. If needed gradually increase to higher speeds and blend until smooth.
  2. Enjoy with a sprinkle of bee pollen on top if desired!
  3. NOTES: Rhubarb leaves are poisonous, be sure to remove all leaf matter before blending stalks!
