Red Lentil and Carrot Stew Recipe

Serves: 2 servings
  • 1 tablespoon coconut oil
  • I shallot, diced
  • 1 teaspoon garlic, minced
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon dried thyme
  • 1 cup carrots, chopped
  • 1 cup dry red lentils
  • 3½ cups water or vegetable broth
  • 1 cup kale, thinly sliced
  • ½ cup red cabbage
  • 2 tablespoons fresh oregano, minced (optional)
  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  1. Heat oil in pot, add in onions, garlic, seasonings and carrots, let simmer.
  2. Add in the veggie broth and lentils.
  3. When the stew comes to a boil, cover and turn the heat down to low to let it simmer. Cook until carrots are tender, about 30 to 40 minutes.
  4. Once it’s cooked, stir in kale and red cabbage; let it cook for a couple more minutes until the kale is wilted.
  5. Top with fresh parsley and serve hot.
