Quinoa, Kale & Tomato Salad Recipe

Ingredients
  • Ingredients:
  • 2 cups shredded curly kale
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, sliced
  • 2 stalks of celery, chopped
  • ½ English cucumber, chopped
  • Dressing:
  • 2 tablespoons of tahini (preferably raw)
  • Juice of a lemon
  • 1 teaspoon olive oil
  • Sea salt, to taste
Instructions
  1. To a large bowl, add all salad ingredients and mix to combine.
  2. In a small bowl, add salad ingredients and mix with a fork to combine. Pour onto salad.
  3. Enjoy!
