Energy Elevating Edamame Salad Recipe

  • Ingredients
  • 1 lb fresh or frozen edamame
  • 1 red bell pepper, chopped
  • 1 small cucumber, chopped
  • ¼ cup celery, finely chopped
  • 1 Roma tomato, chopped
  • 2 Tbsp. basil, finely chopped
  • 2 Tbsp. parsley, finely chopped
  • Dressing
  • 1⁄3 cup fresh lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  1. Prepare edamame according to package directions, if frozen. If fresh, rinse well and set aside.
  2. Combine all the salad ingredients in a large bowl.
  3. Pour lemon juice over the salad and use sea salt/pepper to taste.
  4. Refrigerate until ready to serve.
