Summer Strawberry Beet Mesclun Salad

  • Ingredients
  • 2 red beets
  • 4 cups of mesclun, or your favorite mixed leafy greens
  • ¼ cup freshly chopped cilantro
  • 1 cup of strawberries, cut into small slices
  • 1 cup of cherry tomatoes, halved
  • Dressing Ingredients
  • 1 small shallot, finely chopped
  • 2 Tbs champagne vinegar
  • 2 Tbs. avocado oil
  • 1 Tbs. Grey Poupon mustard
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  1. Preheat your oven to 400 degrees. Wrap up beets in foil and place in the oven to roast for 1 hour, until it is tender.
  2. Remove your beets from the foil and thinly slice into ¼ rounds.
  3. Prepare your salad dressing by adding all dressing ingredients into a large jar and shaking them together.
  4. Place your salad greens into a salad bowl. Lightly dress with a quarter to half of your salad dressing and toss together. Layer on the cilantro, strawberries, tomatoes, and beets. Drizzle with remaining dressing.
  5. Serve salad on your favorite plates and enjoy immediately!
