Summer Strawberry Beet Mesclun Salad

Ingredients

  • 2 red beets
  • 4 cups of mesclun or your favorite mixed leafy greens
  • ¼ cup freshly chopped cilantro
  • 1 cup of strawberries cut into small slices
  • 1 cup of cherry tomatoes halved
  • Dressing Ingredients
  • 1 small shallot finely chopped
  • 2 Tbs champagne vinegar
  • 2 Tbs. avocado oil
  • 1 Tbs. Grey Poupon mustard
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Preheat your oven to 400 degrees. Wrap up beets in foil and place in the oven to roast for 1 hour, until it is tender.
  • Remove your beets from the foil and thinly slice into ¼ rounds.
  • Prepare your salad dressing by adding all dressing ingredients into a large jar and shaking them together.
  • Place your salad greens into a salad bowl. Lightly dress with a quarter to half of your salad dressing and toss together. Layer on the cilantro, strawberries, tomatoes, and beets. Drizzle with remaining dressing.
  • Serve salad on your favorite plates and enjoy immediately!
