Tropical Watercress Citrus Salad

Tropical Watercress Citrus Salad Author: Kimberly Snyder Serves: 2
- 3 cups of watercress
- 1 orange peeled and sliced into quarters
- 2 cups of spinach
- 1 mango peeled, deseeded and cut into cubes
- 1 avocado peeled and sliced into quarters
- Dressing Ingredients
- 2 Tbs. extra virgin olive oil
- 2 Tbs. Champagne vinegar
- 1 orange juiced
- ½ lemon juiced
- 1 tsp. coconut nectar
- 1 tsp. Dijon mustard
Place your watercress and spinach into a large salad bowl.
Add your salad dressing ingredients into a jar and stir together until you reach a smooth consistency.
Pour your salad dressing over your salad and toss well.
Layer on your mango, orange, and avocado.
Serve up on your favorite plates and enjoy!
