Pistachio Power Balls

Ingredients
  

  • 1 cup unsalted pistachios
  • ½ cup unsweetened coconut
  • 1 tsp. vanilla extract
  • 2 cups pitted dates chopped
  • 1 tsp. of water for blending, optional

Instructions
 

  • Place pistachios, coconut, vanilla into a food processor and blend together.
  • Add in chopped dates, 1 cup at a time, until smooth. Add 1 teaspoon of water to mixture if needed (mixture should be moist).
  • Roll equal portions into balls, and place in fridge until ready to enjoy.
