Prepare all your ingredients by chopping your shallots, sweet potatoes, carrots, celery, and bell pepper.
Heat water and tamari in a large pot. Add shallots and sweet potatoes or yams and cook over high heat, stirring often, until shallots are soft for about 5 minutes.
Add chopped carrots, celery, and bell pepper. Cover and cook 3 minutes, stirring occasionally.
Add tomatoes, broth or water, beans, and curry powder. Stir to mix, then cover and simmer until vegetables are tender for about 15 minutes.
Garnish with cilantro and enjoy!
