Feel Good Pad Thai

Ingredients
  

  • Thai Sauce
  • 6 green onions diced
  • 1/2 cup basil chopped
  • 1/2 cup cilantro chopped + ½ cup for garnishing
  • 2 Tbs. mint chopped
  • 2 Tbs. raw almond butter
  • 1 Tbs. GF tamari
  • 2 Tbs. coconut nectar
  • ½ habanero pepper or jalapeno for less spice
  • 1/4 inch ginger root peeled and grated
  • 2 Tbs. olive oil
  • 1 tsp. sesame oil
  • 1 lime juiced, zested
  • 1 lemon juiced, zested
  • 1/4 cup water
  • Kelp Noodles
  • 1 package Kelp Noodles drained
  • 1 cup carrot sliced into ribbons
  • 1 cucumber julienned
  • 1/4 cup sesame oil
  • 1/2 cup raw almonds crushed (for garnish)
  • 1 lime cut into wedges (for garnish)

Instructions
 

  • Add all sauce ingredients into blender and blend until smooth.
  • Combine noodles, carrots, cucumbers, sesame oil, and red pepper to a large mixing bowl
  • Remove kelp noodles from package and drain water.
  • Add herbs and mix well. Set aside and make the sauce!
  • Pour desired amount of sauce on top of kelp noodles. Sprinkle on garnish and enjoy!
