Combine coconut milk, cacao, dark chocolate, arrowroot powder, maple syrup and salt in a saucepan whisk frequently until boiling.
Remove heat and add in vanilla. Set aside and allow to cool.
In second pan combine coconut milk, coconut shavings, arrowroot powder, maple syrup, and in a saucepan whisk frequently until boiling.
Remove heat and add in vanilla. Set aside and allow to cool.
Layer chocolate and vanilla puddings in small serving bowl.
Top with coconut and dark chocolate shavings. Enjoy!
