Easy Dairy Free Broccoli Soup Recipe

Ingredients
  

  • 2 large broccoli crowns stems removed
  • 1 onion chopped
  • 1 garlic clove minced
  • 2 cups low-sodium vegetable broth
  • 2 cups unsweetened coconut milk or almond milk
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Parsley to garnish

Instructions
 

  • In a large pot add garlic and onions and sauté until softened, about 5 minutes. Add the broccoli, vegetable broth, coconut milk and salt, pepper. Bring to a simmer and cook until the broccoli is very soft, about 10 minutes.
  • Working in batches, transfer soup to a blender and puree until smooth. Return puree to pan and season with salt and pepper to taste.
  • Serve hot, garnished with parsley.
  • Enjoy!
