Place a large skillet over medium-low heat, add coconut oil and garlic. Once the garlic has begun to cook, 1-2 minutes, raise heat to medium and add in zucchini noodles, spinach and cherry tomatoes.
Mix to combine thoroughly and stir frequently until cooked, about 5-7 minutes.
Add a splash of water if necessary but most zucchini’s will release adequate water to prevent sticking.
Season to taste with salt and pepper. Add sundried tomatoes and toss for 1 more minute.
Pour the pasta into 2 bowls and enjoy!
