Ingredients
  

  • 3 tbsp. shredded dried coconut
  • 1 tsp. olive oil
  • ½ cup thinly diced jicama
  • 1 ½ cups cooked chickpeas
  • ¼ cup parsley chopped
  • 1/2 tsp salt and pepper to taste

Instructions
 

  • Add all the in ingredients in a bowl and mix well.
  • Season to taste with salt and pepper and serve!
