Orange Zest Spring Quinoa Salad Recipe

Ingredients
  

  • 1 cup uncooked quinoa soaked overnight
  • 2 cups filtered water
  • ½ cup chopped kale chopped fairly fine!
  • ¼ cup green onion sliced thinly
  • 1 cup green beans cut into 2” pieces
  • 1 cup chopped carrots or shredded
  • 1 cup fresh parsley roughly chopped
  • 2 Tbs. fresh lemon or orange juice
  • Zest of one orange
  • 1 Tbs. olive oil
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork.
  • Whisk olive oil, lemon or orange juice, and orange zest together.
  • Toss all ingredients together, season to taste with salt and pepper and serve immediately.
