Creamy Vegan Cauliflower Nourish Soup

Ingredients
  

  • 1 medium head organic cauliflower chopped into florets
  • 24 oz vegetable broth
  • 3 bay leaves
  • 2 cups coconut milk
  • Black pepper to taste
  • Sea salt to taste
  • Micro-greens optional as garnish

Instructions
 

  • In a large pot over medium-high heat, add the cauliflower, vegetable broth and bay leaves and bring to boil. Reduce heat to low and simmer for 35 minutes.
  • Discard bay leaves.
  • Add the mixture to your blender with the coconut milk and blend until smooth. Gently reheat.
  • Season as desired with black pepper and sea salt. Top with micro greens to serve. Enjoy!
