Add your chia seeds to a bowl and pour the coconut milk on top.
Stir the coconut milk and chia seeds together, then add the raw honey in a little at a time until it's as sweet as you like.
Stir again with a fork until all the chia seeds have been distributed evenly into the milk. There shouldn’t be any clumps left.
Cover and refrigerate the pudding for at least 2 hours or overnight.
When ready, stir again and add to little parfait cups. Add some banana slices or fresh fruit on top, and serve up!
