cooked quinoa

large cucumbers
thinly cut into half-moons

large carrot
thinly cut into half-moons
1/2
cup
shelled edamame
1/2
cup
of corn
Dressing Ingredients

Tbs.
sesame oil
1
Tbs.
rice vinegar
1
Tbs.
liquid aminos
1 1/2
inch
freshly grated ginger
Instructions
Toss quinoa, cucumber, carrot, edamame and corn into a large serving bowl.
Place all dressing ingredients into a jar and shake until well blended.
Pour dressing over salad ingredients and toss until combined. Serve and enjoy!
