Simple Cucumber Salad

Ingredients
  

  • 1 cup cooked quinoa
  • 2 large cucumbers thinly cut into half-moons
  • 1 large carrot thinly cut into half-moons
  • 1/2 cup shelled edamame
  • 1/2 cup of corn
  • Dressing Ingredients
  • 2 Tbs. sesame oil
  • 1 Tbs. rice vinegar
  • 1 Tbs. liquid aminos
  • 1 1/2 inch freshly grated ginger

Instructions
 

  • Toss quinoa, cucumber, carrot, edamame and corn into a large serving bowl.
  • Place all dressing ingredients into a jar and shake until well blended.
  • Pour dressing over salad ingredients and toss until combined. Serve and enjoy!
