Feel Boosted Lemon Poppy Seed Bites

Ingredients
  

  • Zest from 1½ lemons
  • ¼ cup lemon juice
  • 2 Tbs. poppy seeds
  • 2 Tbs. hemp seeds
  • 1 cup raw unsalted sunflower seeds
  • ½ cup unsweetened shredded coconut
  • 1 cup pitted dates
  • 1 tsp. fresh grated ginger
  • 1 tsp. turmeric powder
  • 1 Tbs. water as needed

Ingredients for the dusting of the balls:

  • Zest from ½ lemon
  • 2 Tbs. unsweetened shredded coconut
  • 1 tsp. poppy seeds

Instructions
 

  • Add all your ingredients into a food processor and pulse until combined. Scrape down the sides as needed. The mixture should be sticky. Add 1 tablespoon of water at a time if mixture appears too dry.
  • Transfer ingredients into a large bowl and place in the fridge for an hour.
  • Form ingredients into bite-size balls. Mix together dusting powder into a bowl, and one at a time, roll balls in powder until nicely coated and place on your favorite plate.
  • Place back into the refrigerator until you are ready to enjoy them.
