Loaded Cheezy Baked Potato Recipe

Ingredients
  

  • 4 medium russet potatoes
  • 1 Tbs. coconut oil
  • 2 cups broccoli
  • 2 cups carrots sliced
  • 2 cups cauliflower florets
  • ¼ cup chives chopped
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Cheezy Drizzle Sauce
  • 1 cup potato peeled, cubed
  • ½ cup carrots chopped
  • 4 Tbs. nutritional yeast
  • 4 Tbs. coconut water
  • 1 Tbs. olive oil
  • 1 tsp lemon juice
  • 3 ⁄4 tsp garlic powder
  • 1 ⁄4 tsp onion powder
  • 1 ⁄4 tsp cumin
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400 degrees F
  • Cut potatoes in half lengthwise and massage oil, salt, and pepper on both sides of potato.
  • Bake for 30 minutes, or until tender.
  • Chop broccoli, cauliflower, and carrots and massage with oil, salt, and pepper
  • Bake for 20 minutes.
  • For cheezy drizzle, boil potatoes and carrots until tender (about 15 minutes), then drain.
  • Blend potatoes, carrots, nutritional yeast, olive oil, lemon juice, garlic powder, onion powder,
  • cumin, coconut water, sea salt, and cracked pepper in high speed blender.
  • Place veggies on top of potatoes and drizzle with cheezy sauce topped with chives. Add more coconut water for desired consistency.
  • Serve hot and enjoy!
