Preheat oven to 400 degrees F
Cut potatoes in half lengthwise and massage oil, salt, and pepper on both sides of potato.
Bake for 30 minutes, or until tender.
Chop broccoli, cauliflower, and carrots and massage with oil, salt, and pepper
Bake for 20 minutes.
For cheezy drizzle, boil potatoes and carrots until tender (about 15 minutes), then drain.
Blend potatoes, carrots, nutritional yeast, olive oil, lemon juice, garlic powder, onion powder,
cumin, coconut water, sea salt, and cracked pepper in high speed blender.
Place veggies on top of potatoes and drizzle with cheezy sauce topped with chives. Add more coconut water for desired consistency.
Serve hot and enjoy!
