Ingredients
  

  • 1 to mato chopped
  • 1 red bell pepper chopped
  • 1 cucumber chopped
  • 1 cup cooked red quinoa
  • Vinaigrette:
  • 1 tablespoons olive oil
  • 1 tablespoons apple cider vinegar
  • 1 teaspoon of balsamic vinegar
  • Pinch of salt and pepper
