Ginger Miso Golden Beet & Fennel Salad Recipe

Ingredients
  

  • For the salad:
  • 3-4 medium golden beets thinly sliced
  • ½ cup thinly sliced fennel
  • 1/4 cup minced fresh parsley
  • 2 Tbs. chopped cilantro
  • Ginger Miso Dressing:
  • 1 ½ Tbs sesame oil
  • 2 tsp. fresh lime juice
  • 1 Tbs. raw miso paste
  • 1/2 tsp minced fresh ginger
  • 2 tsp. coconut nectar or ½ tsp. stevia or to taste

Instructions
 

  • Thinly slice the beets and fennel on a mandoline preferably- to get super thin.
  • Whisk sesame oil, lime juice, miso paste, ginger and coconut nectar (or stevia) together.
  • Pour over the beets and fennel and top with parsley and cilantro.
  • Enjoy!
