For the salad:
3-4
medium golden beets
thinly sliced
½
cup
thinly sliced fennel
1/4
cup
minced fresh parsley

Tbs.
chopped cilantro
Ginger Miso Dressing:
1 ½
Tbs
sesame oil
2
tsp.
fresh lime juice
1
Tbs.
raw miso paste
1/2
tsp
minced fresh ginger
2
tsp.
coconut nectar or ½ tsp. stevia
or to taste
Instructions
Thinly slice the beets and fennel on a mandoline preferably- to get super thin.
Whisk sesame oil, lime juice, miso paste, ginger and coconut nectar (or stevia) together.
Pour over the beets and fennel and top with parsley and cilantro.
