Energy Elevating Edamame Salad Recipe

Ingredients
  

  • Ingredients
  • 1 lb fresh or frozen edamame
  • 1 red bell pepper chopped
  • 1 small cucumber chopped
  • ¼ cup celery finely chopped
  • 1 Roma tomato chopped
  • 2 Tbsp. basil finely chopped
  • 2 Tbsp. parsley finely chopped
  • Dressing
  • 1 ⁄3 cup fresh lemon juice
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions
 

  • Prepare edamame according to package directions, if frozen. If fresh, rinse well and set aside.
  • Combine all the salad ingredients in a large bowl.
  • Pour lemon juice over the salad and use sea salt/pepper to taste.
  • Refrigerate until ready to serve.
