Ingredients

bunch rainbow chard

cherry tomatoes
halved

carrots
chopped

yellow bell pepper
chopped

cucumber
chopped
1/2
head red cabbage
chopped
Cilantro Parsley Dressing
½
cup
fresh parsley
½
cup
fresh cilantro
¼
medium red onion

garlic clove
optional

teaspoon
cumin
¼
tsp
cracked pepper
¼
teaspoon
salt

Tbs.
lime juice
1
tsp.
red wine vinegar
¼
cup
extra virgin olive oil
Instructions
Layer the veggies over the rainbow chard
Mix all sauce ingredients in food processor or
high speed blender
.
Toss sauce in with salad. Serve and enjoy!
