Rainbow Chard Salad Recipe

Ingredients
  

  • 1 bunch rainbow chard
  • 15 cherry tomatoes halved
  • 2 carrots chopped
  • 1 yellow bell pepper chopped
  • 1 cucumber chopped
  • 1/2 head red cabbage chopped
  • Cilantro Parsley Dressing
  • ½ cup fresh parsley
  • ½ cup fresh cilantro
  • ¼ medium red onion
  • 1 garlic clove optional
  • ½ teaspoon cumin
  • ¼ tsp cracked pepper
  • ¼ teaspoon salt
  • 1 Tbs. lime juice
  • 1 tsp. red wine vinegar
  • ¼ cup extra virgin olive oil

Instructions
 

  • Layer the veggies over the rainbow chard
  • Mix all sauce ingredients in food processor or high speed blender.
  • Toss sauce in with salad. Serve and enjoy!
