Well first things first…have you ever wondered what the difference is between Rainbow chard and Swiss chard? You will be happy to know that Swiss chard and Rainbow chard have an identical taste, are similar in nutrition, and are grown in the same way.

Rainbow chard is an excellent source of:
- Vitamins A, C, and K
- Other essential vitamins and minerals such as potassium, magnesium, calcium, and copper
- A good source of magnesium, potassium, and iron
- Provides many forms of polyphenol, betalain and carotenoid antioxidants (powerful at fighting free radical damage and inflammation)
- Helps the blood sugar-regulating system within the body, aiding in the slow release of glucose (sugar) into the blood stream
Want strong, supple, shiny, healthy hair? Swiss chard is loaded with biotin (an organic compound that creates a direct connection to healthy hair).

Rainbow Chard Salad Recipe
Ingredients
- 1 bunch rainbow chard
- 15 cherry tomatoes halved
- 2 carrots chopped
- 1 yellow bell pepper chopped
- 1 cucumber chopped
- 1/2 head red cabbage chopped
- Cilantro Parsley Dressing
- ½ cup fresh parsley
- ½ cup fresh cilantro
- ¼ medium red onion
- 1 garlic clove optional
- ½ teaspoon cumin
- ¼ tsp cracked pepper
- ¼ teaspoon salt
- 1 Tbs. lime juice
- 1 tsp. red wine vinegar
- ¼ cup extra virgin olive oil
Instructions
- Layer the veggies over the rainbow chard
- Mix all sauce ingredients in food processor or high speed blender.
- Toss sauce in with salad. Serve and enjoy!
