- Preheat oven to 400 degrees F 
- Cut potatoes in half lengthwise and massage oil, salt, and pepper on both sides of potato. 
- Bake for 30 minutes, or until tender. 
- Chop broccoli, cauliflower, and carrots and massage with oil, salt, and pepper 
- Bake for 20 minutes. 
- For cheezy drizzle, boil potatoes and carrots until tender (about 15 minutes), then drain. 
- Blend potatoes, carrots, nutritional yeast, olive oil, lemon juice, garlic powder, onion powder, 
- cumin, coconut water, sea salt, and cracked pepper in high speed blender. 
- Place veggies on top of potatoes and drizzle with cheezy sauce topped with chives. Add more coconut water for desired consistency. 
- Serve hot and enjoy!
