In a large pot add garlic and onions and sauté until softened, about 5 minutes. Add the broccoli, vegetable broth, coconut milk and salt, pepper. Bring to a simmer and cook until the broccoli is very soft, about 10 minutes.
Working in batches, transfer soup to a blender and puree until smooth. Return puree to pan and season with salt and pepper to taste.
Serve hot, garnished with parsley.
