Wraps are one of THE best food inventions ever, in my opinion. Convenient for a busy office person, an overwhelmed mom and a lazy food maker (I happen to fit into all 3 of these categories, if you can count my home office!), wraps are where it is at.

Sometimes we forget about zucchini because it’s not leafy. So we might scoff, “Eh, zucchini. Whatevs!”. But zucchini is extremely high in water, fiber and minerals, and low in calories (learn more about how I feel about counting calories), and has a mild taste that works great in numerous recipes.

Gluten Free Zucchini Veggie Wrap Recipe
Ingredients
- Coconut oil
- 1 zucchini
- 1 cup cremini mushrooms sliced
- 10 leaves fresh basil
- 1 tablespoon spicy mustard
- ½ cup fresh spinach
- Sea salt to taste
- Freshly ground black pepper to taste
- 2 gluten-free wraps brown rice or teff preferably
Instructions
- Turn the grill plate on to medium high heat to preheat and add your coconut oil to grill, spreading to cover entire area.
- Season both sides of the sliced zucchini and cremini mushrooms and add to grill.
- Grill quickly for 2-3 minutes per side.
- Warm wrap gently in a pan for 1-2 minutes per side to soften and top with spicy mustard and sliced basil.
- Top with grilled vegetables and ½ of the spinach. Roll and serve immediately.

I tried this recipe and it is really great. I especially liked the combination of mustard and basil. After a long period of eating only veggies with rice I was really longing for such a change. This recipe was right on time for me and I spontaneously prepared it. It was so fast, this is really perfect after a stressful day.
However, I could not find the brown rice wraps in the supermarket so I had to use wheat wraps (maybe German supermarkets don’t have them…). But still it was very tasty. Please more recipes like this :-D
