Summer Burst Zucchini Pasta Salad Recipe
Summer is NOT the time we want to feel heavy, especially in the middle of the day. Ugh! But what about noodle lovers- like me and maybe you?! Canāt be depriving ourselves of them! But instead of wolfing down platefuls of spaghetti (which I admit I did do when I was preggers!), which can leave you feeling a big congested and bloated, try my delicious new recipe, which is surprisingly satisfying and made from veggie noodles. For real? Yes! Veggie noodles!!

Bountiful Summer & Natures Gifts: Veggies
Veggies donāt have to just be eaten in the same ole cut up shapes. In fact, by spiralizing them and making them slimmer and tossing them with a great sauce- you will find that they can be amazingly delicious!!
As the seasons change, itās important that we adjust our foods intake to include the most nutrient-rich and best foods for that season. This will ensure that we optimize our energy, our biological and emotional functioning, our immunity, and, feeling in tune with our local environment.
During the summer, our body will naturally crave more fluids as we perspire more. And besides being great pseudo noodles :), zucchini is rich in vitamins, mineralsā¦and water!!
Raw veggies are great summer foods for balancing your nutrient and hydration needs.
In todayās salad we have everything from cherry tomatoes, arugula, and cucumber, to shallots, mushrooms and fresh basil (YUM!). And what I love about these veggies is how amazing they taste during this time of the year. What an awesome rainbow!!
Thereās nothing quite like fresh picked veggies from your local farmers market, or even better yet, planting your own garden ā making it a gratifying experience and connecting us to the earth and itās rich bounty. We can really celebrate our health and the delicious food weāre growing right outside our door!
Healthy-Hydrating Beauty Food: Zucchini
Whatās so amazing about this fruit is that it is contains a high amount of water (and fiber), minerals and naturally low in calories, so it gives you the feeling of being full. Itās a great addition to this salad in satisfying your appetite without reaching for other foods that could throw you off your beauty routine.
The dietary fiber in zucchini also adds bulk to your diet and aids in promoting healthy digestion, which Iām ALL about!
Iām obsessed with zucchini noodles. They are like a blank canvas for sauces and dressings. The only thing that sucks a little bit is cleaning the spiralizerā¦but my strategy is to āsoak itā aka hide it in a pot full with soapy water and see if someone else might give Mama a break and clean it later when I disappear from the kitchen :). Shhh!
Our beautiful Earth provides us with a bountiful variety of greens, and zucchini is just one in the bunchābalancing and supporting our entire body and well-being, with its powerhouse nutrients!

Prepare all your ingredients.

Run your zucchini through a spiralizer. Booyeah! If you do not have a spiralizer, thinly slice into ribbons.

Put your noodles in colander and lightly salt. This will help the zucchini let go of its moisture and get a little more soft.

Combine the rest of the ingredients (minus the zucchini and salt).

Toss to combine and chill for about 10 minutes. Then mix with zucchini.

Serve immediately and enjoy!

Ingredients
- 2-3 large zucchini
- 15 cherry tomatoes halved
- ½ cup arugula
- 1 chopped cucumber
- 2 medium chopped shallots
- 1-2 Portobello mushrooms
- 1/4 cup basil
- Juice from 1 lemon
- 1 tablespoon apple cider vinegar
- Sea salt to taste
Directions
- Run your zucchini through a spiralizer. If you do not have a spiralizer, thinly slice into ribbons. Put your noodles in colander and lightly salt. This will help the zucchini let go of its moisture and get a little more soft. Toss to combine and set aside while you make your salad.
- In a bowl, combine the rest of the ingredients (minus the zucchini and salt). Toss to combine and chill for about 10 minutes. Once it's chilled and you're ready to eat, combine the zucchini with the chilled ingredients.
- Serve immediately and enjoy!
