At the same time, your nourishing your skin with powerful beauty foods! Has your mouth started watering yet? I hope so, because I made this daydream of ours a reality with my new Simple Summer Pineapple Coconut Gazpacho recipe.

Gazpacho History Lesson
You may be familiar with a more traditional and basic style gazpacho. Ingredients such as tomato, cucumber, bell pepper are often found in gazpachos throughout the United States. Interestingly, we can trace this soup back to Spain, pre 16th century. The more common tomato-based gazpachos weren’t entirely popular back then, instead these soups were filled with… errr, let’s just say, some not so friendly plant-based foods.
You won’t find any of these ingredients in my gazpacho recipe. Be happy to discover I loaded it with rejuvenating beauty fruits that are bound to hydrate you with a dewy glow!
Rejuvenating Fruit: Pineapple
First of all, I absolutely love enjoying pineapple in the summertime. Hence, it was a simple decision for me to add this tropical beautifying fruit into my gazpacho recipe.
As I shared in my book, The Beauty Detox Foods, pineapple can help your complexion radiate! Its nutrients work to eradicate dull skin and repair it with a luminescent glow. It is also an excellent anti-bloating food, so no more feeling dull and puffy in your bathing suit this summer.
When you think of pineapple, I want you to remember that pineapple loaded with high levels of vitamin C. It’s also filled with an abundance of bromelain. Bromelain is a special enzyme that helps to cleanse the body. It does this by removing debris and toxins from the bloodstream. This enzyme works by improving circulation and reducing the build-up of any stagnant mucus in your system.
Thank bromelain for helping you say goodbye to inflammation and say hello to a soft, gorgeous complexion.
Hydrating Fruit: Coconut
Every time I used to travel to the Pacific islands, or Southeast Asia, I would consume a lot of coconuts. I find nothing as hydrating as sipping coconut water straight from the fruit or snacking on young coconut meat.
Coconuts aid in the healing of our skin’s collagen. They also help bring elasticity back to our largest organ, our skin. Are you tired of seeing dark under-eye circles, or signs of premature aging? Then I would highly suggest incorporating coconut into your gazpacho. This fruit is one of the best natural hydration there is.
Also, do you know that coconuts contain a significant amount of potassium, about twice as much as bananas? It’s true! Potassium is an electrolyte that works to promote cellular cleansing in our bodies. Not to forget, coconuts are filled with other key nutrients, like iron, magnesium, and calcium.
Next time your friends ask, ‘how do you get your calcium if you don’t drink milk’, tell them about coconuts. You may be starting a new trend!
Nourishing Fruit: Avocado
By nourishing your body with the right foods, you can help prevent oxidation from occurring in your skin. Even greater, you can help reverse already damaged skin. What are the wrong foods? Remember these are things like fried foods, animal fats, polyunsaturated vegetable oils and refined sugars. And for the right foods… well I’ve already listed two above, and here is one more…avocado.
Avocados are so luscious and creamy. There was no way I was going to leave this fruit out of my Simple Summer Pineapple Coconut Gazpacho. Rich in skin-smoothing beauty vitamins, A, C, E, and K, avocados are an essential part of my daily beauty regimen. They are also abundant in monounsaturated fats. This helps our digestive tracts stay nice and lubricated, and our skin supple and moisturized.
AVOCADO FUN FACT
Avocados help protect your skin from environmental damage, thanks to their plentiful source of glutamine. Glutamine is an amino acid that stimulates the master antioxidant in the body, glutathione. Glutathione helps the body fight off free radicals. It also helps detoxify chemicals the body may hold onto.
Simply put, avocados protect our cells and make our energy metabolism run well!

I’d say it’s about time we make this cold soup and check out how simple it is with this quick step-by-step guide…
- 1 whole pineapple
- 2 English cucumbers, with skin (about 6 cups chopped)
- 1½ cups coconut water
- 1 orange bell pepper
- 1 avocado
- ¼ cup mint (chopped)
- ¼ cup basil (chopped)
- ¼ cup cilantro (chopped)
- 4 Tbls. green onions (chopped)
- 4 Tbls. jalapeno (minced)
- Sea salt and pepper (to taste)
- Begin by prepping all your ingredients.
- Next, place pineapple, cucumber, coconut water, bell pepper and avocado into a blender and blend for 10 seconds.
- Then add the mint, basil, cilantro and blend for another 10 seconds (or until smooth).
- Lastly, place jalapeno and green onion into blender and pulse for another 5 seconds.
- When you are happy with the consistency of your gazpacho, place it in the refrigerator for at least 30 minutes before enjoying. Add salt to taste.
