Creative Cashews

Let me give this to you straight. Cashews are one of those nuts that you can easily use to create some creamy goodness to a dish. Since we don’t use dairy products in our recipes due to their many congestive issues, cashews are a great option to richen up a recipe. I don’t often create recipes that call for this nut. There are so many beautiful nuts to choose from, but every once in a while, I will rotate this one into the mix, as I’ve done with this Creamy Cauliflower Cashew Dip recipe. 

If you are snacking on cashews raw I’ll be straight forward and say a few of these nuts are all you really need. Rich in flavor and texture, I like to slowly enjoy them and soak in their creamy delightfulness. Cashews are also rich in fiber and healthy fats. They do contain a variety of vitamins, minerals, and health-protective beneficial plant compounds that work well on our overall digestive system.

Radiant Rosemary

Now the true secret to making this Creamy Cauliflower Cashew Dip taste so good is all about using a beauty herb. For your first go at this recipe, I highly recommend using rosemary. It makes this dip taste totally divine! And once you’ve tried it with rosemary, feel free to change it up with another one of your favorite herbs and spices. Curry, oregano, or basil are sure to be delicious! 

Rosemary grows so easily here that I opt to use a fresh variety for this recipe, rather than dried. When it comes to choosing fresh over dried, just remember that while a portion of the nutritional value of many herbs may be lost in drying, you will still reap the benefits. Fresh, organic herbs are certainly the way to go (whenever possible), but I do realize that there are always going to be those times when they are simply not available. It is times like these that dried herbs can come in quite handy.

The important thing is not to skip out on this precious ingredient. Rosemary is one of those amazing herbs that your body can greatly benefit from. Rosemary’s active components are antioxidant, anti-inflammatory, and anti-carcinogenic in nature, making it an important food to protect our health. This amazing herb also helps boost the production of red blood cells. Increasing blood flow further helps to oxygenate vital organ systems, and stimulating the movement of nutrients to cells that may need repair. I like to call this radiant rosemary magic at it’s finest!

Making this Creamy Cauliflower Cashew Dip is easier than you think! 

For starters, you will want to soak cashews in a bowl of water for 2 hours. A quick reminder: we always soak our nuts and grains to help optimize digestion. Prepare your cauliflower by breaking it into florets and set it aside in a large bowl. Once your cashews are about ready, get your oven heated up to 400 degrees. Then you can toss your cauliflower with coconut oil, and sea salt. Next up, grab yourself a baking sheet and place your cauliflower on it and get it into the oven. You will want to roast your cauliflower for about 30-40 minutes until it looks golden and tender. 

Let your cauliflower cool for about 10 minutes while you start working on the cashews. Drain the cashews from the water they have been soaking in and place them in a food processor. Next, add in the roasted cauliflower, water, avocado oil, lemon, nutritional yeast, and rosemary. Pulse everything together until smooth. You might want to add in 1 tsp of water at a time if necessary to thin it to your desired consistency.

And lastly, for my favorite part, place your Creamy Cauliflower Cashew dip into your favorite bowl. Garnish it with sea salt and pepper to taste. Now you are ready to enjoy it till your heart is content! I like to dip in celery, bell peppers, and carrots to the mix. You can get creative and use it as a spread in your favorite veggie wrap. Creamy Cauliflower Cashew Dip

Ingredients
  • ½ cup raw cashews
  • 2 cups cauliflower florets
  • 2 tsp. coconut oil
  • ½ tsp. sea salt
  • 3 Tbs. filtered water
  • 2 Tbs. avocado oil
  • 1 Tbs. lemon juice
  • 2 Tbs. nutritional yeast
  • 1 Tbs. fresh rosemary, minced
  • Fresh ground pepper, to taste
Instructions
  1. Soak cashews in a bowl of water for 2 hours.
  2. Heat oven to 400 degrees.
  3. Toss cauliflower with coconut oil, and sea salt. Add to a baking sheet and roast in the oven for 30-40 minutes, until cauliflower is tender. Let the cauliflower cool for 10 minutes.
  4. Drain the cashews, and place them in a food processor. Add in the roasted cauliflower, water, avocado oil, lemon, nutritional yeast, and rosemary. Pulse until smooth, adding in 1 tsp of water at a time if necessary.
  5. Place dip into your favorite bowl and garnish with sea salt and pepper to taste. Enjoy with your favorite fresh veggies!
