Today I am excited to share with you my latest creation, The Beauty Detox Anika Broccoli Puree. The short version of the funny story behind the recipe is this! I recently needed some broccoli steamed to shoot a video of our Vegan Cheesy Broccoli recipe. This sweet beautiful little assistant named Anika was helping, and she basically brought out a pile of mush. It was unusable! I asked her if she had ever steamed broccoli before, and I realized she had not! So we decided to move on to another recipe, and I told her to save the pile of mushy broccoli and I would figure out what to do with it. For lunch I decided to use it as a base and it turned into the puree I am sharing with you today! :)
I recommend pairing this puree with my Pesto Stuffed Mushrooms which are found in my
30 Day Meal Plan, or you eat it along any salad or a whole variety of entrees of your choice!
This puree has healthy beauty fats which are essential to incorporate in the right, moderate amounts into your Beauty Detox Lifestyle. It is also packed with nutrition from the
broccoli and nutritional yeast- minerals, B vitamins, and ample amounts of protein.
You don’t need much of this puree to really heighten the flavors of your dish. As you may know, I am now 8.5 months
pregnant, I have been avoiding onion and garlic due to pregnancy-induced acid reflux. :) If I was not pregnant I might have cooked the puree with some onion and garlic to add an additional depth of flavor to the dish. If you are a garlic and onion lover feel free to modify this dish using those ingredients!
I decided to use broccoli for the base of this dish for many reasons. I have mentioned in the past the wonderful anti-inflammatory benefits of broccoli and wanted to share a few more reason why I love this vegetable. A key part of this dish is steaming the broccoli as it enhances the cholesterol – lowering benefits! Steaming the broccoli can also make it easier on your digestive system – as some tend to get bloated from raw broccoli in particular. My Beauty Detox Lifestyle focuses on the power of optimizing your digestion. Broccoli can help play a key role in that by improving our bodies detoxification system. Researchers have recently identified one of the key reasons for this detox benefit. Glucoraphanin, gluconasturtiian, and glucobrassicin are 3 glucosinolate phytonutrients found in a special combination in broccoli. This dynamic trio is able to support all steps in body’s detox process, including activation, neutralization, and elimination of unwanted contaminants.
Now I will share a little photo journey to making this puree…
Cut 4 heads of broccoli into florets.
Steam until softened (around 6-9 minutes or so, depending on your steamer).
Measure 1 1/2 cups of coconut milk.
Blend with the coconut milk until smooth.
Measure 1/4 cup nutritional yeast
1/2 cup of walnuts, pine nuts or cashews.
Measure 1 Tbs. of olive oil. Add in the nutritional yeast, nuts of your choice, and olive oil and blend again.
Heat gently over the stove at a low temperature, stirring in sea salt and pepper to your taste. Adjust seasonings.
Can serve as a swirl beneath an entree (simply using a spoon- dish out a little mound then swirl with the spoon into a spiral shape), or in a little scoop or bowl on its own along with some other tasty treats!

Anika Broccoli Puree

Serves: 4-6
- 4 head of broccoli around 2 pounds
- 1 1/2 cups of coconut milk
- 1/4 cup nutritional yeast
- 1/2 cup of walnuts pine nuts or cashews
- 1 Tbs. of olive oil
- Sea salt to taste
- Freshly ground black pepper to taste
Cut the broccoli into florets.
