Why Eat Raw Foods?
What I love about incorporating raw foods they are packed with digestive enzymes that help your body break down and process that food.
Also, some vitamins and minerals that are lost when certain foods are cooked.
Vegetables lose about 25% of their minerals when cooked compared to raw, and Vitamin C is destroyed by heat.
Losing nutrients isn’t always the case, and there are certain ones that may be more easily absorbed with the added element of heat. For example, the lycopene in tomatoes is increased and more easily utilized when cooking is involved. So I always encourage trying to eat BOTH raw and cooked foods in your diet- it’s certainly not all or nothing.
Organic foods are grown in better conditions, with better quality soil and less pesticides. This means organic foods tend to yield higher essential minerals, as well as vitamins, nutrients, and enzymes you need for good health.
What I find to be extremely important is that organic foods respect our environment, support local economies, and have fewer toxicity-related health risks. You can see why I firmly stand behind the decision to choose organic. I only eat organic, non-GMO corn, for instance.
When you choose organic you choose to support a healthy, clean earth, and put healthy, clean produce into you and your family’s bodies.
Next time you do your grocery shopping, try to take notice of the color of organic foods—how vibrant with life force, and grown naturally in the sun with maximum chlorophyll and strength. Compare this with the conventional food that are pushed and propped up through the food chain (as fast as possible), in as large amounts of possible.
Remember too, that the health of produce has to come directly from the soil content which is where it gets all its minerals. Once picked, a fruit or vegetable stops deriving additional nutrition, including chlorophyll and minerals.
Don’t we owe it to ourselves (and to our families and children), to keep chemicals, fertilizers, and genetically modified foods from clogging up our guts?! I think so!
To me, the choice is obvious that we are at a crucial juncture where we must protect our planet, our environment, our water sources, and the natural laws of nature—all while protecting ourselves. It’s a win-win!

Is Corn OK To Eat?
Yes, in rotation, like other veggies (barring and allergy of course), but you want to make sure that the corn you get is, of course, organic (and try to find local white corn, if at all possible). You only want corn that you can eat shortly after being picked, otherwise it will become too starchy.
Corn has a lot of fiber and natural enzymes, and what I love about organic white corn is that you don’t need to cook it (making it more juicy in my opinion). It actually would be a great idea not to cook it, especially in this recipe— keeping the enzymes intact and digesting much easier. Corn also has Vitamin C, which will be preserved if you eat it raw.
These golden veggie nuggets are such a great ingredient to spruce up any salad, add to soups, and of course to your salsa. So let’s get shucking and enjoy your festivities without the guilt!

- 2 large ears organic corn, sliced off the cob (keep raw)
- ¼ red onion, diced finely
- 3 ripe tomatoes, diced finely
- 1 sweet bell pepper, diced finely
- ½ cup fresh cilantro, chopped finely
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Juice of 1-2 limes
- 1-2 jalapenos or increase heat with organic hot sauce or cayenne pepper to taste
- Serve with: gluten free chips or veggies
- Prepare all your veggies and mix together in a bowl.
- Add the seasonings and adjust for your taste.
- Serve immediately. Great on wraps, tacos etc or pair with a gluten free chip or veggies for a snack!
