So what’s with the mango? Besides the more obvious vitamin C you might assume is contained in this bright orange-yellow fruit, did you know that mangoes are an amazing source of beta carotene? Yes, it’s true! Beta carotene is a natural antioxidant that is used by the body to make Vitamin A. Rather than consuming fatty and high cholesterol foods to get our dosage of Vitamin A, we can indirectly find this vitamin through vegetables and certain fruits, like mangoes.

Mangoes are also really high in antioxidants, which some research has found that along with its high content of vitamin C, overwhelmingly outweighs the small amount of naturally occurring fructose contained in the fruit.

Pick wisely! The stronger or more intense the color of the fruit (or vegetable), the higher the concentration of beta-carotene content. So go for vibrant mangoes- whether the outside is bright yellow (in the case of champagne), or red/green
there are so many different varieties. Other foods with loads of beta carotene: cantaloupe, pink grapefruit, broccoli, spinach, sweet potato, and (the obvious one)
carrots. :)

Coconut Yogurt

I’m all about eating probiotic-rich food but not if it’s going to compromise our beauty goals and healthy lifestyle. We tend to see probiotic-rich foods advertised in dairy yogurt choices, but dairy is congestive and difficult to digest! It’s not human food, it’s baby cow food after all (despite how much the dairy lobbyists have tried to get us to not think about this fact!).

On the other hand, I do recommend taking the right kind of probiotic supplement, and consuming Probiotic & Enzyme Salad, aka raw sauerkraut and other raw, cultured vegetables and high-quality and non-pasteurized kimchi.

While coconut yogurt isn’t as pure as say, just eating fermented plain coconut (which is time consuming as you have to open all those darn young coconuts and scrape out the meat, blend it, then add the starter, etc.) —for this recipe, I love using a coconut milk-based yogurt from a brand called So Delicious. It is dairy free and soy-free, and it tastes pretty great. It is sweetened with cane sugar, so there are no scary artificial sweeteners or agave in it. The goods outweigh the negatives and I’ll take that over the other not-so-good choices out there!

Ingredients

  • 1 cup vanilla coconut yogurt such as the So Delicious brand
  • 1 ripe mango peeled and chopped (or 1 cup frozen mango)
  • 1 ripe banana sliced
  • Coconut flakes

Directions

  1. Blend coconut yogurt, mango and banana until smooth. Top with coconut flakes.
  2. Enjoy!
