Hearty Sweet Potato, Black Bean & Quinoa Casserole Recipe
This hearty sweet potato, black bean, and quinoa casserole is a simple, nourishing meal packed with plant-based protein and fiber perfect for an easy, feel-good dinner any night of the week.
We all love hearty comfort foods, like pasta! Noodles are delicious- and so much fun to eat! Yet we often want to find lighter, gluten-free alternatives that are still satisfying…and my Sundried Tomato Zucchini Pasta Recipe is an amazing one!

Sun-dried tomatoes are a favorite Beauty Detox Solution ingredient to use in recipes, as they add such punchy flavor to recipes, and are packed with so many healthy and beauty-boosting nutrients.
Here are a few numbers if you are interested :) : One cup of sun-dried tomatoes has 8 grams of protein, 7 grams of fiber, 39 percent of the recommended daily intake of potassium, 23 percent of the daily intake of thiamine and riboflavin, 31 percent of niacin, and 19 percent of vitamin K (!).
The B vitamins sun-dried tomatoes contain are essential for converting food to energy and to help in maintaining the nervous system, and keeping our skin healthy in the process.
These red beauts also provide antioxidants that protect your health by neutralizing free radicals and lowering inflammation.
Sun-dried tomatoes contain 23 percent of the recommended daily intake of vitamin C and 16 percent of vitamin A in a one cup serving. This is great news since vitamin C supports the immune system and neutralizes free radicals throughout the body.

Zucchini noodles really are like a blank canvas for sauces and dressings, and one of the reasons I’m so obsessed with cooking with them (I’m just not a fan of cleaning the spiralizer…but my strategy is to soak it in a pot full with soapy water and get to it later! Or hopefully someone wants to help Mama out :) ).
It may come as a surprise to hear that zucchini is a fruit because often times than not, zucchini is most often cooked. However, zucchini is the ultimate hydrating fruit that can be eaten and prepared raw, or cooked! Here we are cooking it lightly, so it tastes a bit softer and more noodle-like, while still retaining the freshness. `
What I love about this fruit is that it is extremely hydrating—being high in water and fiber, and low in calories—giving you the feeling of being full. What a great way to satisfy your appetite without reaching for other foods that just might throw you off your digestion and energy.
The dietary fiber in zucchini adds bulk to your diet and aids in promoting healthy digestion, which I talk about a lot in my Beauty Detox books!

The younger zucchini have a more subtle taste than the more fully developed, which are usually more than 8 inches long. With it’s soft covering and buttery white flesh, almost all its parts can be eaten (including the flesh, seeds and the skin).

Prepare ingredients.

Place a large skillet over medium-low heat, add coconut oil and garlic.

Once the garlic has begun to cook, 1-2 minutes, raise heat to medium and add in zucchini noodles.

Add spinach.

Add sliced cherry tomatoes. Mix to combine thoroughly and stir frequently until cooked, about 5-7 minutes. Add a splash of water if necessary but most zucchini’s will release adequate water to prevent sticking.

Season to taste with salt and pepper. Add sun-dried tomatoes and toss for 1 more minute. Pour the pasta into 2 bowls and enjoy!
