Unfortunately, store-bought popsicles are so often full of excess sugar, fructose, and corn syrup. In other words, a fast track to a sugar crash. (No thank you!)

Cucumbers are one of the best foods since they have such a high water content. This makes them super hydrating and perfect for summer! Besides water, cucumbers are also made up of B vitamins and vitamin C. Other key nutrients cucumbers contain are potassium, calcium, iron, and magnesium.
Often in these warmer months our bodies can overheat and retain water, so it is a great idea to keep snacks like these popsicles on hand. They help keep you cool and hydrated while boosting your nutrients and balancing your electrolytes.
And even cooler to note, cucumbers can help prevent dull skin on your body. The phytochemicals in cucumbers cause the collagen in your outer skin later to tighten up, meaning cucumbers can actually reduce the visibility of cellulite! How cool is that!?! Salty Cucumber Lime Coconut Popsicles
Ingredients
- 2 English cucumbers (peeled and deseeded)
- ¼ cup coconut water
- ¼ cup lime juice (about 2 large limes)
- ½ packet LMNT Electrolyte citrus packet
- 2 Tbs. coconut nectar
Instructions
- Prepare all your ingredients. Place all ingredients into your blender and puree.
- Pour the mixture through a fine mesh bag into a bowl, squeezing as much juice from the excess pulp as possible.
- Evenly divide the juice into popsicle molds. Insert popsicle sticks and place into freezer for 4 hours before enjoying.
