Medicinally Powerful Mushrooms
Ta daaa! Here she is, the star ingredient in this recipe: shiitake mushrooms. There are so many varieties of mushrooms. Each of them come with their own unique set of health benefits. They also have quite a different flavor profile.
I am using shiitake mushrooms in this recipe for a handful of reasons. In Asia, the shiitake mushroom is highly praised for its flavor and medicinal values meaning. Shiitake means the “mushroom of the oak tree”. Surprisingly, about half of the world’s supply of shiitake mushroom comes from Japan! Among mushroom species, shiitake mushrooms are the second most highly consumed mushroom globally. That must mean Japan is pumping out a lot of mushrooms!
Studies are finding such amazing medicinal benefits linking to consuming shiitake mushrooms. They have the natural ability to discourage inflammation, tumors, “bad” bacteria, harmful viruses, and, ironically, fungus. Wild right!? Shiitake mushrooms are also known to give you energy thanks to their B vitamins such as B2, B5 and B6. They provide you energy by breaking down fats, carbs, and proteins.
Another cool thing worth noting about shiitake mushrooms is how much copper they have! Just one serving alone will provide you with 65% of your daily value of copper. You might be thinking, copper… what on earth do I need copper for? Copper is one of the few metallic elements accompanied by amino and fatty acids, essential to human health. Since the body can’t synthesize copper, our diets must supply it regularly. And unfortunately, few people eat adequate amounts of copper-containing foods. Copper deficiency can also be a factor in coronary heart disease development. So instead of having just one Shiitake Asada Taco for lunch, maybe two or even three!
Beautifying Bell Peppers
Now I can’t give all the credit to the mushrooms for making these tacos so nourishing. I feel that bell peppers deserve a quick word too! :) Do you know that bell peppers are technically a fruit? I know that sounds crazy right?! But yes they are (they contain their own seeds within them).
And these beautiful offerings from nature work wonders when it comes to repairing and regenerating collagen in your skin. Collagen supporting supplements seem to be all the rage right now. I get questions about it a lot. In reality Beauties, I say it is always best to support yourself with beautifying foods like these bell peppers, rather than take (often) animal-based collagen, which I don’t personally take or recommend.
Bell peppers are also a good source of silicon. And silicon makes our skin more resilient, diminishing wrinkles and strong. By adding bell peppers to your Shiitake Asada Tacos, you are helping to strengthen the connective tissue throughout your body. This basically helps keeps your entire body together. Think of it like duct tape holding your joints and ligaments together… Pretty important stuff right?! So don’t skimp on the bell peppers in your tacos. They are beautifying and beneficial and absolutely delicious :)

Feel Nourished Shiitake Asada Tacos
Ingredients
- 4 cups of shiitake mushrooms diced in halves
- 1 poblano chili chopped
- 1 orange bell pepper chopped
- 1 red bell pepper chopped
- 1 bunch of green onion chopped
- 1 bunch of cilantro chopped
- 1 ripe avocado diced
- ½ cup organic salsa
- 8 corn tortillas
Ingredients for marinade:
- ½ cup avocado oil
- ⅓ cup Braggs liquid aminos or ¼ cup of tamari [gluten free soy sauce]
- ½ cup shallots chopped
- ½ tsp. red pepper flakes
- ½ tsp. smoked paprika
- 1 tsp. cumin
- 2 Tbs. coconut sugar
- 1 large lemon juiced
- 1 large orange juiced
Instructions
- Whisk together marinade in a bowl.
- Add mushrooms, bell peppers and poblano to marinade and let sit for 1-2 hours.
- In a large saucepan, add mushrooms, bell peppers, and poblano with a ¼ cup marinade and spices. Saute on medium low heat for 10-15 minutes, until veggies are soft and liquid has dissipated.
- As mushroom mixture is almost finished being cooked, heat up tortillas. Then dice the avocado and cilantro.
- Once tortillas are cooked, assemble your tacos by scooping mushroom mixture onto your tortillas, and layering with avocado and cilantro. Serve with your favorite salsa and enjoy!
