Creamy Vegan Cauliflower Nourish Soup

I came up with this super Easy Cauliflower Soup Recipe last week and I can’t wait to share it with you. Enjoying this soup is a great opportunity to eat your way to beauty, vitality and optimal health. 

This is a great soup for this time of the year, as puréed soups are fibrous, easy to digest and cleansing for spring. I never really considered myself a hardcore cauliflower lover…but this delicious soup makes it super easy to love! :)

Why Eat This Cruciferous Vegetable?

First of all, cauliflower contains tons of fantastic  beauty nutrients, including vitamins, minerals, antioxidants and many other phytochemicals.

Cauliflower helps your body’s ability to detoxify in multiple ways. It contains antioxidants that support detoxification, along with the glucosinolates that help to activate detoxification enzymes. It can help to fight cancer, boost heart and brain health, and is anti-inflammatory.

You may have heard that foods that have the richest colors are the most nutritious? While that is true… sometimes this power vegetable breaks that rule! A key thing we talk about as part of the Beauty Detox Lifestyle is digestion. Remember a core Beauty Detox principle: cleansing is beautifying! Our friend, though stark white, is an amazing whole food that you can add into your diet that is super high in fiber and water content so it can help ensure you don’t feel constipated.

Cauliflower Nutrition

Eating just one cup of raw cauliflower will provide 77% of your vitamin C needs, 20% of vitamin K, 10% or more of vitamin B-6 and folate needs for the day. On top of that, cauliflower also includes smaller amounts of thiamin, riboflavin, niacin, pantothenic acid, calcium, iron, magnesium, phosphorus, potassium and manganese.

While some like it raw, I admit that I am not such a big fan (same for me for raw broccoli). I think raw cauliflower is not that appealing ( just being honest!)- and that it’s way better cooked, both from a taste perspective and can be much easier for many to digest (as with other members of the cruciferous family). Serves: 4-6
Ingredients
  • 1 medium head organic cauliflower, chopped into florets
  • 24 oz vegetable broth
  • 3 bay leaves
  • 2 cups coconut milk
  • Black pepper, to taste
  • Sea salt, to taste
  • Micro-greens, optional as garnish
Instructions
  1. In a large pot over medium-high heat, add the cauliflower, vegetable broth and bay leaves and bring to boil. Reduce heat to low and simmer for 35 minutes.
  2. Discard bay leaves.
  3. Add the mixture to your blender with the coconut milk and blend until smooth. Gently reheat.
  4. Season as desired with black pepper and sea salt. Top with micro greens to serve. Enjoy!

    really good! I added a bit of cayenne pepper to mine because it’s snowing again out east and I wanted a bit more warm!!
