Sweet Strawberry Season

It’s summertime and you know what that means, Beauties… strawberry season! These soft, red, plump fruits are a great treat for the whole family, especially the little ones! If you are lucky enough to live near a strawberry farm, I highly suggest taking your family over to pick your own strawberries straight from the earth. When picking your own, try selecting ones that are plump, bright and even-colored for the best taste. It is such a wonderful way to connect with your food and to cherish each sweet bite of this delicate fruit. Strawberries’ sweetness is one of nature’s best gifts.

I absolutely adore adding these heart-shaped berries to summer salads. Strawberries contain a collection of polyphenol antioxidants that includes flavonoids, phenolic acids, lignans, tannins, and stilbenes. Each one of the polyphenol categories contains a large variety of antioxidants—shown to have anti-inflammatory properties. Being that they are also an excellent source of vitamin C, this Strawberry Beet Mesclun Salad is bursting with sweet, healthy goodness.

Have you ever stopped to examine the itty bitty seeds that cover each strawberry? Before you sink your teeth into their sweet flesh, take a look at these gems up close. Those little seeds are a reminder of the beautiful amounts of fiber and beauty-enhancing folate that they provide. They also have the highest water content of any food group, making them a super hydrating treat!

Strawberries are just one of many favorite fruits listed in my Beauty Detox Foods book. Have you had the chance to check this book out? Beautiful Beauty Beets

Beets are such a beautiful veggie. Their vibrant color should be a constant reminder to us all that why we need to be eating them on a regular basis. That rich red pigment is an indicator that this powerful veggie works synergistically with your blood. How so, you might wonder? Well, eating beets can actually increase the oxygen-carrying ability of the blood by up to 400 percent. Thanks to their loads of betacyanin, beets have the ability to stimulate liver function, which further helps oxygenate your blood.

Another beautiful thing that comes with eating these earthy veggies is how well they can help clean your insides. Beets are a natural blood builder and colon cleanser, thanks to their rich sources of iron and fiber. When you enjoy the Summer Strawberry Beet Mesclun Salad, you are doing yourself a huge favor by removing toxins and congestion from your body. This goes as far as cleansing your capillaries traveling to the eyes, making them shine even brighter!

If that isn’t enough to kick up your beet excitement there is more! Many people unknowingly fill their body with acidic foods and drinks. This can create unbalance in our systems and leave us more susceptible to inflammation and disease. Enjoying beets can actually bring you back into balance, as they are extremely alkaline and high in antioxidants.

Beets also have high concentrations of vitamins A and C. Plus they are filled with folate, which is key in producing new cell growth and healing. Beets are a beautiful gift for your body, so don’t let them be a stranger in your life. Enjoy them in my Summer Strawberry Beet Mesclun Salad recipe or in a few other recipes you can see here

Mighty Mesclun Mix

Okay, we got through the sweetness of beets and berries but let me not forget to talk about mesclun. Think of your mighty mesclun mix as basically a collection of young greens. You might find mixes like this already together in a salad bar or if you are picking up a collection of spring mix. The term mesclun actually means “mixture” in French. A traditional mesclun mix often contains arugula, chervil, oak leaf, and mâche. But it can also be made of a combination of different greens as long as it contains a variety. Mesclun greens are a nice way to do a salad because it is a great way to get a variety of flavors that come with a variety of nutrients.

My goal for this Summer Strawberry Mesclun salad recipe is to help you break up your typical salad routine. We’re often so creatures of habit, that it’s easy to get stuck in a routine of eating the same greens. We might always go for the same kind of greens at the store or from a menu and not even realize it. over and over again. Falling into that habit isn’t just boring for your taste buds, it could also be depriving you of certain nutrients.

By incorporating a wide variety of leafy greens into your diet, you’re more likely to ensure you’re covering all your bases in terms of vitamins and minerals. One way you can be sure of this is to try and rotate with greens from all different families. For example, kale and cabbage are from the Cruciferae family. Spinach and swiss chard are from the Amaranthaceae family. Our leafy lettuce and romaine lettuce are from the Asteraceae family and our herbs like cilantro and parsley are from the Apiaceae family. So whatever mighty mix you put together for this Summer Strawberry Beet Mesclun Salad recipe, be proud that you are getting a wide variety of nutrients in that heal your body and boost your beauty!

DIY Dressing

When we put so much love and energy into all the different items that go into our salad, we have to remember one very important thing. Salad dressing can make all the difference in enjoying your meal to the fullest. Too often salads are ruined by super oily, dressings or heavy dairy-loaded toppings. The magical goodness of all salads often comes from how it is dressed.

For this Summer Strawberry Beet Mesclun Salad recipe, we are using a DIY dressing that is a simple champagne mustard vinaigrette. Now if you are not a huge fan of mustard, you can always opt out of adding this to your dressing. I feel that it gives it just the right tang that this salad needs. Be sure to feel free and get creative here. Have fun and experiment with your DIY dressing until you get the flavor you love.

Of course, it may seem simpler to just use store-bought bottles, but these babies can totally set you back when you are using processed dressings. When you start to make your own salad dressings, you will notice how amazing it feels to know what you’re covering your leafy greens in is something equally delicious and beautifying. You’ll want to eat more veggies when you jump on the DIY dressing bandwagon. And more veggies is something we all need!
