Plant-Based, Brain-Boosting Nutrients

A large percentage of issues in your body can be avoided by going plant-based. Unfortunately, I hear many people believe that they can’t get all the right nutrients on a plant-based diet, but that is totally not true. This is such a huge topic, but for today’s recipe let’s focus on some of the nutrients that help develop healthy brains. 

Let’s take DHA Omega-3 fatty acids for example. Omega-3s support healthy brain cell structure. Fish or fish oil supplements are not the only sources of these essential fatty acids. Omega-3s can be found in abundance in a number of delicious plant-based foods, like the ones that we are using in today’s Brain-Boosting Seaweed Salad recipe.

B-vitamins are another nutrient that comes to mind here – B12 to be specific. It is involved in the metabolism of literally every single cell of the human body. It not only helps in the production of red blood cells, which carry life-giving oxygen throughout your body, but also it decreases the risk of heart disease.

B12 plays an important role in the absorption of folic acid. It is very important that you maintain a good balance of both of these nutrients. This is even more important for Mamas who are pregnant or nursing, as healthy levels can reduce the risks of severe birth defects.


A healthy adult needs roughly 3 mcg of B12 per day. And seaweed so happens to be an amazing way to get this into your diet! Plus, it is a great source of the brain-boosting DHA omega-3 fatty acids found in cold-water fish. Thanks to its superior nutritional profile, seaweed is a winning brain-boosting nutrient.

This sea vegetable is rich in other elements that support brain health dietary as well. For starters, seaweed accumulates significant amounts of iodine from the seawater. Iodine is necessary for normal growth and development of the brain. To be specific, just two tablespoons of wakame seaweed alone provides you with 280% of your daily iodine needs. Additionally, it provides you with magnesium, a key nutrient for reducing stress and protecting the brain from the negative effects of stress.

If you read my book, The Beauty Detox Solution than you may remember that I haven’t always recommended tofu as the number one plant-based protein choice.  If you don’t have a soy allergy and want to incorporate it into your diet sparingly, that is okay. Just make sure that you are getting an all organic tofu. Sadly over 90% of soy in our country is genetically modified, or GMO. This includes the huge amounts of processed soy used in junk food and in the feed for factory-farmed animals.

Because it is one of the most tastiest things you can cook, and I don’t have soy allergies I’ve been enjoying a little tofu in my life. There are just so many unique ways that you can prepare it and serve it up. And even more importantly, tofu is a rich source of protein, calcium and iron. 

When it comes to dietary needs for plant-based people, this recipe definitely checks the boxes! One half cup of tofu provides you with over 80% of your daily calcium needs and 10 grams of protein. Hemp seeds are mighty tiny, but that doesn’t stop them from packing a full array of nutrient benefits. Speaking of protein, these little miracles are 33 percent easily digestible plant-based protein. Just two tablespoons provide you with eleven grams of protein. And protein supports the brain’s ability to stay focused and keep you energized.

Putting Everything Together

To make your Brain Boosting Seaweed Salad, start off by placing the wakame and dulse into a bowl of cold water. You will want to let it sit for 10 minutes to soften before straining it. Then you can add in your rice vinegar, coconut nectar, flaxseed oil, liquid aminos, and freshly grated ginger into a jar. Shake it all together and blend it well before you dress it over your seaweed. 

Once your seaweed is all dressed up, saute up your tofu in a skillet until it is golden brown. You will also want to get all your other veggie ingredients chopped up and ready. I like to serve this salad by layering all the fresh veggies over the nicely dressed seaweed. But if you want to mix it all together in a bowl that works too. Just don’t forget to layer your tofu on top and sprinkle on those mighty hemp seeds!

Brain-Boosting Seaweed Salad

Brain Boosting Seaweed Salad
Serves: 2
  • 1 oz. dried wakame seaweed
  • 1 oz. dried dulse seaweed
  • ½ package of extra firm tofu, cut into cubes
  • 1 yellow bell pepper
  • 2 large carrots, thinly sliced
  • 1 Japanese cucumber, thinly sliced
  • 4 radishes, thinly sliced
  • 1 avocado cut into wedges
  • 2 Tbs. pickled ginger
  • 2 Tbs. hemp seeds
  • Dressing Ingredients
  • 2 Tbs. brown rice vinegar
  • 1 Tbs. coconut nectar
  • 2 tsp. flaxseed oil
  • 2 tsp. liquid aminos
  • 1 tsp. freshly grated ginger
  1. Add your wakame and dulse to a bowl of cold water. Let the seaweed sit for 10 minutes to soften, then strain from water and set aside.
  2. Prepare your dressing in a mixing jar. Add in your rice vinegar, coconut nectar, flaxseed oil, liquid aminos, and freshly grated ginger. Shake together to blend well, then pour over your seaweed and toss to combine.
  3. Turn your stove onto medium heat and place 1 tablespoon of coconut oil into large pan. Place your tofu into the oil and saute for about 3-4 minutes on each side, or until golden brown.
  4. Separate your seaweed into 2 serving bowls. Add in your bell pepper, carrots, cucumber, radishes, avocado and pickled ginger to your seaweed salads. Top it off with your tofu and sprinkle on your hemp seeds. Enjoy!
