Raw Cauliflower “Mashed Potatoes”

 

 

I hope you had a great weekend! I ended up going to the Rubin Museum yesterday on 17th Street, which is fantastic. It specializes in Himalayan art, and it certainly ignited some nostalgia of my travels through Nepal and Kashmir. Then, this girl I traveled with through Nepal randomly emailed me today to say hello! Thoughts really travel through the ether. 🙂

Today I had a rather lazy day. My friend came over to my apt. to cut my hair, which I love because we can hang out and I don’t have to go to a salon! I also made this easy and yummy recipe, which I wanted to share with you.

I like to pair this with salads and veggies. And you can even add a layer to my sweet potato shepherds pie, delicious!

      I did a haircut! Only about an inch off the length, which I do every 6 weeks. I also have a lot of layers, so here it probably looks more different than it is because it was blow-dried straight. You’ll never catch me blow-drying my hair on my own!! 🙂

    Speaking of thoughts traveling through the ether–my friends and I did a video on a very similar cauliflower recipe a few weeks ago. It should be up on my site soon. I put lemon zest, nutmeg, garlic, and a bit of curry powder in mine.

    Kimberly, I have been taking probiotics, but based on advice I read elsewhere, I have. Been taking it after eating. Since I started reading your blog recently, I see that you recommend taking it on an empty stomach. Why the difference in advice?

      Hi Roberta! I recommend taking a probiotic on an empty stomach because if it is taken with food it stays in the stomach with the food until the food is digested and passed in to the intestines. If in the acidic stomach too long, there is a very good chance that it will be drastically affected in terms of potency when it finally does get to th intestines, and much of the cultures will have been killed off. Also consider than many probiotics do not even have a proper coating to get through the stomach acid in the first place, and we can see that taking it with food could render them largely ineffective! xx Kimberly

    Do you eat any meat or fish at all? I have been absolutely starving lately and have been eating some bad things because of the hunger. Maybe I am not eating enough or need more protein? I had cut out all meat and wondered if that could be why. Thanks, Donna 🙂

      Hi Donna, be sure you are transitioning and cleansing. You should load up on fiber-filled salads, green smoothie, avocados. Grains like quinoa or millet have good plant protein, and are better choices than meat. Some days we need more density, especially in winter. Sometimes I’m starving too! As long as we load up on the good stuff, it is okay to eat in abundance. 🙂

    Ahhh… I love this! I was just thinking of foods I could use for substitutes.

    Like green peppers for french fries (cooked, sorry not completely raw yet!) etc.

    Thank you for this great recipe! In a perfect world, what would the ideal raw vegan *breakfast
    *lunch
    *dinner
    *snacks

    consist of nutrient wise (proper combination + amounts of calcium, protein, fiber, etc?)

      Hi Skye,
      There is no simple answer to your question! There are transitional diets I put people on, to ensure people don’t “overcleanse” in the beginning, if they had a previous diet filled with dairy and other clogging foods. The “perfect” diet for everyone requires individualization, which is based on lifestyle, metabolism, exercise levels, background, medical history, size, etc. That is why I do nutritional consultations!
      I can not even recommend the Green Smoothie or the Green Juice for everyone across the board, as so many people have blood sugar issues and candida, so any kind of sugar, even fruit sugar, would be detrimental (and feed yeast).
      The reason so many people can’t stick to any kind of blanket diet is that individualization is so important. I also have to really see what is going on first before I make a specific diet for someone.

      I hope you enjoy the recipe! The one thing I DO recommend across the board is lots of greens!!! Salads, salads, salads!!

    I know it says raw but don’t you cook the cauliflower to make it softer??

      You can and there are tons of recipes with cooked cauliflower, but the whole point in this recipe is to keep the cauliflower raw so that it retains all the vitamins/nutrients and beneficial enzymes!

      Hi, Kimberly

      I would be interested in a response to Jocelyn’s question as well.

      Although I am not diabetic, I am what I would describe as severely hypoglycemic (low blood sugar). Since starting the beauty diet several weeks ago, my tummy has settled and is happier than ever. Alas, I am struggling with low energy, fatigue and blood sugar crashes. Difficult for me to get enough calories in my body when eating light to heavy, especially when I exercise moderately in the mornings. An hour of gentle swimming three mornings a week and four to six kilometres of walking five mornings a week. I also walk most afternoons. Again, anywhere from four to six kilometres.

      In addition to eating a small (sometimes large, to be honest) avocado after my 24 to 32 ouce green smoothie, I typically find myself reaching for a quick source of protein. Usually seeds or nuts or the protein smoothie you recently posted. Then it’s a stretch (a long wait) until lunch. After lunch, I feel much more satisfied, and an apple before I leave work for the walk home carries me through until dinner. Just the mornings that are so very difficult to get through.

      Your thoughts and guidance would be most appreciated. Thank you for all that you do.
