We are right on the tail end of cucumber season, which is technically through August, but I’ve still been rockin’ them a lot lately! Cucumbers are a serious beauty food, and are high in all the B vitamins (except for B12), Vitamin C, Zinc, Iron, Folic Acid, Calcium, Magnesium and Potassium. They will give you energy while helping to repair and smooth the collagen in your skin.
If you’ve had a few drinks they aren’t a bad snack to throw in later that evening or the next day, to help replenish the B Vitamins that the alcohol depleted from your body!
Because they are high in water, they can be a good snack as they will fill you up with fiber and water.
The phytochemicals in cucumber cause the collagen in the skin to tighten, firming up the outer layer, and reducing the visibility of cellulite. So it is great idea to rub a few cucumber slices on pesky cellulite right before going to the pool or beach this holiday weekend! You can also rub it on wrinkles before a photo op or evening out!!!
Here’s some top ways to use cucumbers:
– You can throw them in your Glowing Green Smoothie sometimes instead of celery.
– Throw in your salads.
– Great for dips
– Wrap in nori wrappers with avocados or sprouts
– Throw some cucumber slices in your water for a spa-like mellow cucumber taste.
Enjoy your cukes!!
See you soon!!
Love, Kimberly
I know this blog is about cucumbers, not lemons, but I was gathering lemons yesterday in the orchard behind the house and it was so amazing!! Haven’t been cucumber-picking here in LA yet. :)
Hi Kimberly
Isn’t it wonderful to have a lemon tree! I have 40 organic Meyer Lemons and harvest about 6000 pounds a year from September till May! I ship priority mail on Monday, we pick over the weekend so they are super fresh and completely natural. Water sunshine and love with some organic citrus fertilizer three times a year. Each of my trees named for a woman who inspired me, hence the name, Lemon Ladies Orchard.
Enjoy California!
I tend to avoid them because I don’t particularly like them, but you have convinced me to add them to my veggie rotation!
HI land animal,
Yes, give them a go!! You might start liking them more. :)
Hey Kim,
I love your blog. Its been so helpful. I recently started drinking warm lemon water with some raw ginger first thing in the morning instead of coffee. I have noticed a difference in just 2 weeks with my sinuses. Im not blowing my nose nearly as much in the morning!
Also Ive been experimenting with the green smoothies. Im more of a savory person so I came up with a version thats similar to a bloody mary. Tomatoes, spinach, kale, celery, parsley, cilantro, romaine, a few peices of onion, lots of lemon juice, and a dash of celtic salt. SO YUMMY
Hope you have a great weekend,
Amanda
Great!! Some people really like that tomato kick!
Hi Kimberly,
I started reading your book again, and I’ve been drinking the Glowing Green Smoothie this week. I’ve also started to eliminate meat and carbs out of my diet this week. What can I do to ensure that I lose weight?
I am green with envy about your lemons (and Karen’s).
I love cukes but never thought to add them to the green smoothie–so excited! I don’t love-love celery but sometimes crave cukes so I am totally switching them up!
Great Morgan!!
Hey. I’be been following your blog for ages and always admired you. It came across my mind, what did you look like before you “got a flash” ? Your body is amazing and i love health and well being, so if all it is going to take me is to change into this “diet” to lose weight and feel good in all ways, I’m gonna do it. I need some advice, thanks.
Hi Boo,
Thank you! It is a process, and remember we need not race there! Your daily diet is huge- what you put in your mouth every day restructures and builds your body. So make good choices. The other parts include being sure to cleanse on an ongoing basis (with your food choices and making sure you go to the bathroom a lot!!), exercise (for me it is yoga), and meditation/your personal spiritual practice. If you don’t have a good way to deal with stress and stay balanced, it will adversely affect your whole being- physical and all aspects. Check around the blog, there’s lots of advice to help you get started!
xx Kimberly
Hey Kimberly,
I just recently fell in love with your blog. Tasty recipes, great nutrition info, and yoga…AWESOME!
I have a question for you.. My friend just asked me to put together a sugar detox plan for her. I wanted to know if you had any tips for helping someone who is completely addicted.
Thanks!
Check out my blog on the salt-sugar connection. Have her start by balancing her diet more, and avoiding salty foods, which can ironically promote sweet cravings! Greens are very balancing, so be sure she is getting a lot of them. Also, be sure to take a probiotic and/consume raw sauerkraut, to get any imbalance of bad bacteria in the body under control! xo
Hi Kimberly!
My sister and I are obsessed with your website, it is awesome, and we also follow you on twitter! We just moved out to LA a month ago and saw from your twitter that you are in LA too now. We are excited to read about what healthy finds you discover out here!!!
Just wanted to say thanks for all of the great posts!
Hi Kat,
Thanks!! I am here for about 7 months. How do you guys like LA? I am loving it so far, and having a blast. I love the ocean and the nature. The weather has been a big drab though, and I really don’t like how dry it is. But a small price to pay!!
Come visit again soon!
Hi Kimberly!
Great post! Quick question: does xyletol also have an aftertaste, like stevia?
It tastes better I think. Don’t overdo xyletol though, as it could give you the runs! Use in moderation.
I tried frozen raw cranberries with almond milk as a smoothie. Is that a good combination? It tasted great with some stevia. I love your blog. :-)
What’s an equivalent alternative to celery – I dont like the taste, and in your book its in the green smoothie, before having the actual breakfast… :-) THANKS!!
Love cukes! …but back to probiotic enzyme salad for a second.. Really keeps only one month in the fridge? I feel like it’s just starting to get tasty around then??! And it doesn’t look or smell “spoiled”. Why the one month rule?
I love cucumbers…I’d always grab one whole out of the fridge when I was little and just eat the whole thing for snack…my mother then dubbed me “the cucumber kid”. Now I have a 6 year old cucumber kid of my own :) I use them in salads and also in the GGS, not in place of the celery, in addition to it…and it just adds another dimension of flavor and sweetness and freshness…absolutely love it.
I’m not a big fan of celery. I do like it with a smear of almond butter but it basically “ruins” a good GGS or GGJ for me! I’ve been using Cucumbers instead. Is there any reason I shouldn’t do this? Or maybe another alternative I’m not considering?
Thanks for all you do! I’m loving your book & program!
So by eating cucumber cellulite can disappear 100%?
