Almond milk can be found at your local health store or nowadays, even at most regular grocery stores. But there is nothing quite as delicious as freshly made, completely raw and live, and preservative-free nut milk made in your own blender.
It’s kind of magical the first time you see the process of milk being made from nuts. Milk from nuts… wild, right?! You may not have time to make your own almond milk every single week, but once you get into the habit of remembering to throw almonds into a bowl of water overnight, you might just end up making it more often then you think.
I mention a nut milk bag (yeah I know, not exactly an every day household kitchen item) in the video, but if you can’t find it don’t worry, just use a cheese cloth.
These nut milks can be enjoyed on their own, or used as a base in smoothies such as the Rainforest Acai Smoothie, Happy Cow Dairy-Free Hot Chocolate or Delish Squash Bisque.
Fresh Almond Milk Recipe
Yields: About 6-8 cups (depending on how much water you use)
Keeps up to 3 days in the refrigerator.
- 4 cups raw almonds (soaked overnight)
- 5-8 cups of filtered water (feel free to use more or less, depending on how thick you like your milk)
- Stevia (optional, to sweeten to your taste)
- Rinse the soaked almonds very well in a strainer. This helps remove the inhibitor enzymes on the outside of the nuts, and helps make them more easily digestible and less acidic.
- Place the soaked almonds and the filtered water in a blender and blend on high until smooth.
- Taking a nut milk bag or cheese cloth, pour the mixture through the cloth into a separate container.
- Squeeze all the liquid out of the cloth with your hands, so you get all the milk out and discard all the nut pulp and nut fiber (or save for another recipe). If you are in a rush, pour the liquid through a fine strainer (though you won’t get every drop of milk out, the way you would with the cheese cloth.
- Do a quick-rinse of the blender. To make a smoothie right away pour some of the strained almond milk back in the blender with some stevia to sweeten it, along with some vanilla extract and any other smoothie ingredients you are using. Store the rest in a container with a lid in the fridge.
Hi Kimberly. I read your book and it changed my life. I have a glowing green smoothie every morning. I am hugely addicted to these smoothies and I look forward to them every morning. My lunches include salads. Dinner is also salads with tons of veggies. I eat animal protein no more than 3-4 times per week and only at dinnertime. I have been following this program for several months and I feel great. I do exercise several times per week with cardio and yoga. However, even though I am thin, I still have cellulite. What is the best way to combat cellulite?
Can I use the blade and top that came with my regular Vitamix or do I have to buy the other blade that they say you need to use when you mix grains?

I usually use the regular blade, so you don’t really have to buy the other one unless you plan on processing a lot of grains. :)

Cellulite is totally normal. It comes not just from having too much fat, but from collagen breaking down so that the “lumpy” fat shows through the skin. Keep lots of citrus in your diet like grapefruit and lemons, which have citric enzymes and lots of collagen-building vitamin C, as well as lots of greens that contain vitamin C and amino acids, including spinach, kale, etc.
Don’t be too hard on yourself- again most women have it, and you probably notice it more than anyone else! xx

I’m in the same boat as Diane, following the program rigorously, though mostly vegan. I’m fairly active, and only 24 years old.. Can cellulite be reversed?

Fresh is so much tastier than the boxed stuff–Definitely worth the effort. I like to use different nuts, and add a brazil nut or two for added selenium!
It’s fun to see how other people make their almond milk, thanks for sharing! We make ours everyday with only 1 cup of soaked almonds, 6 cups of water and 3 pitted medjool dates. Just wanted to mention that as you could save quite a bit of $ by using less almonds :)
I personally don’t like my almond milk too watery which is what happens with too few almonds. Also, dates are shockingly high in sugar (though natural), so I don’t recommend them for every day almond milk consumption. I save them for the occasional dessert.

i have a little question: i am a bit concerned about eating or drinking nuts (including coconut) every day. i always think of all the heavy nut allergies many people seem to have. why do people get allergies to pollen, apples, and nuts anyway? shouldn’t they get allergies from MSG etc? apart from the daily portion recommendations you give in the BDS, is it advisable to eat nuts on a daily basis? i have the feeling that they are in a latent state and don’t “wanna” be consumed… anyway, thank you for reading and for keeping up your great work! i’ve incorporated so much into my daily life – a couple of months ago i would’ve never guessed i could do that!! thank you xxx

The best other nuts to use for nut milk are Brazil nuts and hazelnuts. I don’t recommend making cashew milk, as cashews often have mold issues (they are off the menu for Blossoming Beauties/those with candida) and should be consumed in strict moderation. The other nuts are so much healthier!

Who knew I’d like collard greens to make wraps?! My question for you, is do you have any recommendations for other cook books or blogs that I can use as I continue on my journey? I feel like most vegan cook books use a lot of wheat and are not using “beauty pairings.”

love this video!! i was shocked at how easy, or appears easy, it is to make. I’m going to make this week. i don’t use almond milk that much so I’m going to half the recipe. who knows though i may get hooked on it. and i’m going to get the buckwheat granola cereral to see how that goes, good to have more healthy options.

I borrowed your book from my local library and have devoured it from the begining to finish about 10 times by now. I am trying to take baby steps by incorporating few changes at a time as I have been a carb carzy vegetarian all my life and still have severe starch cravings. But your book has shown me a path that I feel is feasible for me to take in the long run. I have still not started the GGS as I am 100%sure I have candida. Just wanted to ask you if I can still have it with no fruit or maybe just haf an apple?
Also, wanted to know your opinion on reversing hair loss. I have lost most of my hair and although the hair loss itself is not so severe now, I am looking for natural ways to regrow hair. Do you have any advice specifically do address this issue? I really respect our opinion.

I have been following your book to the “T” and indulged in the probiotic and enzyme salad. I mean I would eat it twice a day with a dash of tamari. I loved it! Sadly, I recently found out I cannot consume cabbage because it inhibits my thyroid and coconut “flocculates serum or precipitates serum proteins” according to my allergy results. So since I know the importance of live probiotics is there a way I can still get them from food and of that quality? I heard about fermenting other vegetables but I would like to know what you can suggest. And thank you for all the wonderful insight it has really changed my life! :)

I I’ve almost made all your recipes, I made the raw lasagna for new years but it came out somewhat watery… my book is a dirty mess because it’s always in the kitchen with me!:) So, I have a question, which I’ve been confused about… Jeff mentioned above that he makes his almond milk with dates… Is it ok to combine nuts (protein) with dense fruit (dates)? Also what do you think about LÄRABAR… There not organic bars but there a blend of unsweetened fruits, nuts and spices. There gluten- free, soy free, dairy free, raw, kosher, vegan, whole foods… I wanted to buy them but was’nt to sure if there combinations match my true beauty lifestyle and would like an opinion from the expert:) thanks so much for sharing! Hi Kimberly, I have the same question. I understand we should not add nuts to our smoothies but how then is it ok to add the nut milk? @kimberly it’s not that milk disagrees with me, but there are days that it doesnt sit as well as other days. that is the reason i switched to skim milk a few years back. my youngest sister, though.. she can no longer have anything dairy. this started about a year ago. she has to read the labels, even on almond milk she buys from the store, because a lot of non-dairy products possess diary “byproducts”. she is addicted to reading labels because she doesnt want to have really bad days. with three kids, who can blame her lol she left a quart in my fridge. i started using it in my coffee. then with my cereal and then with my oates. i much prefer it. but the store bought lasts six to seven weeks. when you make it yourself with only almonds and water, it lasts three-to-four days. and im stuck with the nervous query of how many preservatives are present in the store bought almond milk ?? if i can make a batch fairly easy enough to last four days, then i can make it twice a week. just for coffee and oats and cereal in the mornings. but to answer your question: ive been consuming a.milk with my coffee and oats every morning since december, a third of a year now. i wont go back to strictly dairy milk. never.

I do have Trace Minerals brand of liquid magnesium/calcium/zinc in my refrigerator, shall I use that until I get what you recommend? Also, how will I know how many I need to take in the evening?

I made this almond milk, and it is amazing! I dehydrated the pulp, and made it into almond flour (when I then used for waffles….), so it was a great money saver too!

I have a pan rack over my kitchen counter, so I just hang the nut milk bag up on the rack with the bowl underneath and leave it for a few hours to completely drain. Perfecto.
