Homemade Almond or Hazelnut Milk Recipe

Keeps up to 2 days in the refrigerator. Unsweetened almond milk can be found at Trader Joe’s or your local health store. But there is nothing quite as delicious as freshly made, completely raw and live, and preservative-free nut milk made in your own blender. These nut milks can be enjoyed on their own, or used as a base in smoothies such as the Rainforest Acai Smoothie or the Watermelon Slush Smoothie, or in Cow Dairy-Free Hot Chocolate. These nut milks can also be enjoyed in recipes like Vegan Squash Bisque.

Homemade Almond or Hazelnut Milk Recipe

(Makes 2-3 servings)

Ingredients
  

  • 2 cup raw almonds OR 2 cups raw hazelnuts soaked overnight
  • 2 1/2 cups of filtered water feel free to use more or less, depending on how thick you like your milk
  • Stevia or dates to sweeten to your taste (optional, and be sure to get the kind that have their pits in them and you remove yourself).

Instructions
 

  • Rinse the soaked nuts very well with a strainer.
  • Place the soaked nuts and the water in a blender and blend on high until smooth.
  • Taking a cheese cloth or bag, pour the mixture through the cloth into a separate container.
  • Squeeze all the liquid out of the cloth with your hands, so you get all the milk out and discard all the nut pulp and nut fiber. If you are in a rush, pour the liquid through a fine strainer (though you won’t get every drop of milk out, the way you would with the cheese cloth.
  • Do a quick-rinse of the blender, and put the strained ‘milk’ back in the blender. Add the Stevia or dates to sweeten to your taste, or leave it out altogether if you like your milk plain.
  • Enjoy plain, or as a base for smoothies or other recipes!

    Hi Kimberly!
    I’m soo excited to try to make my own fresh almond milk! But I live in Thailand and raw almonds are nearly impossible to find and when you do, even the smallest bag is out of my price range.

    I have been loving some of the rice milks you can find here though, two products from the brand, V-Fit, the Young Rice Milk and the Seven Grain Rice Milk (both in low sugar, sugar free doesn’t exist here. Thais love their sweet drinks after all).

    My question is ..what are you thoughts on rice milk? I know you mention to avoid soy milk and of course all dairy, but I haven’t read anything that mentions rice milk.

    How long can the almond milk last in the ‘fridge? and can I use in place of milk in hot drinks?

      Hi Sheila, it lasts about 3 days or so in the fridge. Yes you can use in hot drinks, though I would heat it to below boiling. xx

    Stephanie,
    I have seen that other websites say to spread the pulp on a tray and put it in the oven at the lowest setting. Leave it in there for 2 to 3 hours to allow it to completely dehydrate. You can then use it for flour, or as a coating for chicken, or other things of that type.

      Hi Stacy…yes, you can definitely substitute with raw walnuts. Walnuts are considered a clean plant-based protein source, along with other raw nuts and seeds, including hemp seeds and pumpkin seeds. Keep track of the changes you make and always listen to your body. Lots of love! 😉
