Rainforest Acai Smoothie Recipe

Rainforest Acai Smoothie Recipe

This acai smoothie doubles as a great snack or a great dessert (a few hours after a meal). Acai is a fatty fruit that doesn’t digest as quickly as high water-containing fruits, so it is one of the few fruits I use in desserts.

Acai can be purchased frozen in health stores. Personally, I like to use the Superfruit Packs from Sambazon!

I love using my Vitamix when I make my smoothies because it creates the smooth and creamy texture I strive to have in this kind of smoothie.

Ingredients

  • 2 cups unsweetened almond milk
  • 1 packet frozen acai
  • ½ Tbs. raw cacao optional
  • Stevia to taste
  • ½ avocado optional to make thicker and more filling

Instructions

  • Using a good blender, blend the acai and almond milk at low speed until you’ve broken down the Acai, then move to a higher speed. Once it is smooth, use the Stevia. Add the ½ of an avocado if to make a denser snack or desert. Enjoy!

Beauty Secret Tip: Açai is loaded with beneficial nutrients and antioxidants, including Omega 3 fatty acids, amino acids, minerals, key vitamins and fiber.  The Omega 3 fatty acids found in Açai maintain the structure and fluidity of cell membranes, facilitating the inflow of nutrients and the outflow of waste products, promoting youthful, smooth and radiant skin by keeping skin cells hydrated and strong.

Happy Blending!

Love,

Kimberly

Could we substitute other berries if we have a hard time finding acai? If so, which ones would work? Thanks!

      Hi Kim,

If frozen acai berries are not available in any of my health stores, is there a brand you recommend that I should order? I would love to incorporate acai into my diet but need to know what to get!
      Thanks Kim!

    Hey Kimberly,
Best wishes from Germany and thank you for your amazing book! I want to try your Rainforest Acai Smoothie but I can’t find frozen acai packets here in Germany. Is it possible to use powder instead?

I am allergic to tree nuts. What do you recommend instead of almond milk?

I love the addition of the avocado to this! I made it without it a couple of times at first, but it’s so much more filling with it! A winner!

I made this but used carob instead of cacao due to the caffeine. I replaced the avacado with a banana and both ways were really good.

Great blog you have here but I was wanting to know if you knew of any discussion boards that cover the same topics talked about in
this article? I’d really like to be a part of community where I can get responses from other knowledgeable people that share the same interest.
If you have any recommendations, please let me know.
    Thank you!

I use frozen acai packets in my daily breakfast smoothie. Hadn’t tried as dessert/snack. Will today. I like from Trader Joe’s.
